Don't toss out those potato peels! They make a very quick easy (and inexpensive) snack! Kids love them!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Scrub potato skins, and pat dry. Place them in a medium bowl, and pour salad dressing over. Toss to coat. Spread the potato skins out in a thin layer on a baking sheet.
- Bake for 20 minutes in the preheated oven, until crisp and golden.

POTATO SKINS
Steps:
- Lightly grease outside of potatoes, cut small slit in top and bake at 425 degrees F for 45 minute or until soft. Let stand until cool enough to handle, about 15 minutes.
- Cut potatoes in half lengthwise and scoop out cooked potato, leaving a very thin layer of potato. (Save cooked potato for mashed potatoes or hash browns.)
- Brush outside and inside of skins with melted butter. Sprinkle inside with steak seasoning and Parmesan cheese.
- Place on lightly greased baking sheet. Bake 8 minutes or until crisp and bubbly.
- Fill with cheddar cheese and bacon. Bake 3 minutes or until cheese is melted. Top with a dollop of sour cream and sprinkle of chives.
- Variation: Twice Baked Potato Fingers Bake 3 large (about 5-inch) potatoes for 1 hour; cool. Cut in half lengthwise, and then lengthwise in half again, making 12 long fingers. Scoop out and proceed as above.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking pan.
- Pierce potatoes with a fork. Microwave the potatoes on high until they are soft; approximately 10 to 12 minutes.
- Cut the potatoes in half vertically. Scoop the inside out of the potatoes, until 1/4 inch of the potato shell remains.
- Heat oil to 365 degrees F (180 degrees C) in a deep fryer or a deep saucepan. Place the potatoes in hot oil, fry for 5 minutes. Drain potatoes on paper towels.
- Fill the potato shells with cheese and bacon bits. Arrange them in the prepared baking pan.
- Bake for 7 minutes, or until the cheese is melted. Serve hot with sour cream.

- Bake potatoes at 400° for 1 hour or until tender. Cool slightly; cut in half lengthwise and scoop out pulp, leaving 1/4 in. shell. (Save removed potato pulp for another use.) , Cut skins into strips or halves; brush skin sides with butter and place on a baking sheet. SIMPLE BAKED POTATO
This recipe for baked potatoes is delicious with steak, meatloaf, or by itself. I never was fan of the potato's skin until I began making this recipe! These potatoes taste amazing loaded with cheese, sour cream, and/or chives! If you want to get fancy, use this recipe as a base recipe for one of the many potato skin, whipped baked potato, or other more-to-it recipes on here.

- Preheat the oven to 400 degrees F (200 degrees C).
- Place butter in a microwave-safe bowl and microwave on high until melted, 20 to 30 seconds. Stir in olive oil, garlic powder, salt, and pepper.
- Use a fork to poke about 5 holes into each potato. Place each potato on a sheet of aluminum foil about 6 inches wide. Brush butter mixture over potatoes, making sure to evenly coat each one. Wrap up completely in foil. Poke 5 more holes into the wrapped potatoes.
- Bake potatoes in the center of the preheated oven until easily pierced with a fork, about 1 hour. Spread leftover butter mixture over potatoes after cutting them open.

- Scrub potatoes throughly, prick several times with a fork.
- Bake at 400 for 1 hour, or until done.
- Allow to cool to touch.
- Cut potatoes in half lenthwise.
- Carefully scoop out pulp, leaving about 1/4 inch thick shells.
- Cut each shell lenthwise into 1 inch wide strips.
- Place on ungreased baking sheet.
- Brush tops of strips with butter.

- Cut the potatoes in half and scoop out the center leaving a 1/8-inch rim. Cut each potato skin half into thirds and drizzle with olive oil. Sprinkle with paprika and salt and pepper. Place the skins, flesh side down in a hot pan with 1 tablespoon of oil. Cover the pan. Let cook for 1 minute on each side or until crispy. Add grated cheese to the skins and let them melt. Transfer to a serving plate. Serve with sour cream and chopped scallions.
SKINNY SKINS (BAKED POTATO SKINS)

- Wrap potatoes in aluminum foil and bake at 400 degrees for approximately 45 minutes, or until tender.Let potatoes cool. When cool, cut potatoes in half lengthwise. Use a spoon to scoop out most of the soft center and place in bowl. Set aside.
- Brush the potato skin halves lightly with olive oil or spray with canola oil and place them flat side down on a baking sheet. Put the skins in the oven at 400 degrees and cook until hot and crunchy, approximately 10-15 minutes. Add cucumber, celery, tomato, mushrooms and 3/4 of the chives to the potatoes. Add olive oil, vinegar, salt and pepper. Toss well.
- Pull the potato skins out of the oven. Fill each potato skin with the potato salad mixture. Top each with a dollop of sour cream, blue cheese crumbles, turkey bacon (if using), remaining chives and a grind of black pepper. Serve immediately.

- Cut potatoes in half lengthwise; scoop out pulp and discard (or save for another use) leaving 1/4-inch shell.
- Place on a greased baking sheet.
- Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper and brush all over potato skins.

HEALTHY BAKED POTATO SKINS
Potato skins have always been one of my favorite tail-gating foods, but they are SO fattening. I developed a healthier way to make them....not as good as the real thing but darn close!

- Wash potatoes and bake in 350 degree oven for about an hour. Do not prick the potatoes. Remove from oven and cool.
- Slice potatoes in half lengthwise and scoop out the soft insides with a spoon. Get as much out as possible without puncturing the skin. Spray both sides of the skin with non-fat cooking spray and season with salt and pepper.
- Place back in a 350 degree oven for about 3-5 minutes, until crisp.
- Mix sour cream, garlic and chives. Season lightly with salt and pepper.
- Fill each potato skin with tomatoes, scallions, bacon, bell pepper, and cheese. Place back in oven until cheese melts, about 2-3 minutes.
- Serve with cold sour cream & garlic/chive sauce.
- Yummy!
LOADED BAKED POTATO SKINS
Loaded potato skins... This is one of our favorite appetizers. I use the thicker cut of bacon and men always devour them!

- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove from the oven.
- When potatoes are cool enough to handle, cut them lengthwise and scoop out flesh to within 1/4 inch of skin. Reserve flesh for another use. Place skins back onto the baking sheet.
- Combine olive oil, Parmesan cheese, salt, garlic powder, paprika, and pepper in a small bowl; brush over both sides of skins.
- Return to the oven and bake until very crisp, about 10 minutes, turning skins halfway though.
- Sprinkle skins with Cheddar cheese and bacon. Return to the oven and bake until cheese is melted, about 2 more minutes.
- Serve topped with sour cream and green onions.
