Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
- Combine flour, white sugar, brown sugar, baking soda, cinnamon, and salt together in a bowl. Whisk olive oil, milk, egg, and vanilla extract in a separate bowl until smooth; stir into flour mixture until batter is just moistened. Fold zucchini, blueberries, and pecans into batter. Fill prepared muffin cups 2/3 full with batter.
- Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.

I created these because I looked all over for a recipe for blueberry banana muffins that were actually healthy. Many had claimed to be this but if you looked at the nutrients for it, they were horrible.

Steps:
- Preheat oven to 350 degrees F and grease or line a muffin pan.
- In a medium bowl, mash bananas with rice syrup, pureed carrot, vanilla and mix well.
- In a small bowl, combine baking soda, flour, and oats. Add to banana mixture and stir by hand until throughly combined. Fold in the blueberries.
- Pour batter into muffin pan and bake for 25 minutes or until toothpick inserted in middle comes out clean.

My blueberry muffin recipe, that is gone before I turn around if left on the counter. My husband adores it, and can easily eat 4-5, bless his heart! I experimented with this for low fat in 1994, and have made it since.

Steps:
- Spray 12 large muffin cups with Pam or use paper cups.
- Combine first 7 dry ingredients in mixing bowl.
- Mix well.
- Beat egg whites, banana and melted margarine together until smooth.
- Add banana mixture to dry ingredients.
- Stir just until moistened.
- Fold in blueberries.
- Fill muffin cups almost full.
- Bake at 375 degrees F for 20-25 minutes.
