BANANA ZUCCHINI MUFFINS
This is my healthy twist on recipe #39997, originally posted by JellyBeans. I hoped with a little tweaking here and there I could make it even healthier than it already was. I really enjoy these after they cool.

Steps:
- Oven at 350°F.
- Spray muffin tin with non-stick cooking spray.
- Mix banana and zucchini. Add egg and applesauce. Combine well.
- In a seperate bowl, combine flour, baking soda, baking powder, oatmeal, salt and walnuts.
- Add dry ingredients to wet ingredients, stirring until just combined.
- Bake 25-30 minutes, or until a toothpick comes out clean.
- Let rest for 5 minutes, and then cool on rack.

Steps:
- Grease 12 medium size muffin tin. Preheat oven 400 degrees.
- Mix dry ingredients together in large bowl. Mix eggs, oil and shredded zucchini together and pour over dry ingredients. Mix until moinstened.
- Spoon batter into muffin tins. Bake 25 minutes. Cool on wire rack. These freeze well.
OATMEAL ZUCCHINI MUFFINS
This is a low-fat oatmeal muffin that I added zucchini to. I changed the baking time to 25-30 minutes, I found the center to be a little undercooked at 20 minutes, but it could be because I used frozen shredded zucchini and it was pretty watery...not sure.

- Soak oats in milk for 1 hour.
- Add remaining ingredients, mix with fork until just moistened.
- Divide equally among 12 muffin tins that have been sprayed with non-stick spray or muffin liners.
- Bake in 400F for 25 -30 minutes.

- In a large bowl, combine the flour, sugar, pecans, oats baking powder, salt and cinnamon. In a small bowl, beat eggs; combine with zucchini and oil. Stir into dry ingredients, stirring only until moistened (batter will be lumpy). , Fill greased muffin cups 3/4 cull. Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Steps:
- Preheat oven tp 400 degrees F.
- Combine flours, oats, baking powder, salt, cinnamon in a medium-large bowl.
- In a medium bowl, combine egg, milk, oil and honey. Mix well. Add wet ingredients to dry ingredients and stir until just moistened. Gently fold in zucchini.
- Fill lined or well greased muffin tins 2/3 full. bake for 15-20 minutes, until a toothpick inserted in the center comes out clean.
- Cool on wire rack.
OAT BRAN ZUCCHINI MUFFINS
These are moist, but not heavy. They are very easy. I use the food processor to chop the zucchini and measure the oil before the molasses so that the molasses just slides right out. I developed this recipe to get my quota of Oat Bran and use my zucchini.
