Sauteed Zucchini with Garlic and Herbs image

Steps:

  • In a large skillet, heat oil, over medium-high heat. Add zucchini, scallions, and garlic. Saute for 6 to 8 minutes, or until zucchini is tender.
  • Slowly pour in vegetable stock. Stir in sauce mix and parsley. Simmer for 1 1/2 to 2 minutes. Season, to taste, with salt and pepper.

2 tablespoons extra-virgin olive oil
2 large or 3 medium zucchini, sliced 1/4-inch thick
2 scallions, chopped
1 teaspoon crushed garlic
2/3 cup vegetable stock
2 tablespoons Garlic and Herb Sauce Mix (recommended: Knorr)
2 tablespoons finely chopped flat-leaf parsley
Salt
Freshly ground black pepper

This is a great little side dish Sandra Lee suggested serving with Spaghetti and Meatballs which we did but loved it so much I wanted to post it so it could be made with anything as a side dish. She concurs saying "it can accompany any entree." This is from her magazine's August/September 2009 issue. It is yummy and the kids even ate it happily. Great for garden leftover zucchini. Very flavorful. It is made with simple pantry ingredients besides fresh zucchini.Taste and enjoy. ChefDLH

Steps:

  • Preheat oven to 425°.
  • Spray a rimmed baking sheet with nonstick cooking spray.
  • In a large bowl, combine zucchini, Italian seasoning, olive oil, cheese, salt, and pepper.
  • Spread zucchini in a single layer on prepared baking sheet.
  • Bake for 8 to 10 minutes, turning once.
  • Serve immediately.

Steps:

  • Heat a large saute pan with olive oil over high heat. Add zucchini slices and saute for 5 minutes until slightly brown and tender. Add remaining ingredients, except shaved Parmesan, and toss to combine.
  • Remove to serving bowl with slotted spoon. Top with shaved Parmesan and serve hot.

4 medium zucchini, sliced 1/4-inch thick
2 tablespoons olive oil
2 tablespoons unsalted butter, room temperature
1 teaspoon Italian seasoning (recommended: McCormick)

  • Light broiler.
  • On a baking sheet, toss together fries, olive oil, garlic, and seasoning. Arrange fries in a single layer.
  • Broil 6 inches from heat source for 5 to 8 minutes.
  • Serve fries hot with tzatziki for dipping.

1/2 (26-ounce) bag frozen "fast food" fries (recommended: Ore-Ida)
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons minced garlic

Parmesan Roasted Zucchini Rounds image

Steps:

  • Line a baking tray with foil, and spray with non-stick spray. (Toaster oven works great for this if it has a baking tray).
  • Arrange zucchini in a single layer and drizzle with olive oil, rub them down and turn to coat both sides with a thin coating of oil.
  • Sprinkle with salt and pepper. Then top each round with a generous pinch of parmesan.
  • Broil in 450 degree oven for 5-8 minutes, or until cheese is melted and golden. (Cook times may vary depending on oven, so keep an eye on it).

Steps:

  • Stir together dry ingredients.
  • Stir in beaten eggs until moist.
  • Fold in zucchini.
  • Melt oleo in skillet over medium heat.
  • Use 2 Tablespoons mix for each round. Fry 2-3 minutes on each side until golden brown.
  • Adding 1/2 cup grated carrot makes it even more delicious.
  • This is optional too, but I added grated onions and hot peppers to my mix.

Super Easy: Zucchini Side Dish image

Steps:

  • Slice up zucchini cross wise in thin slices about 1/8" thick.(Does not have to be precise). Set aside.
  • In skillet on medium low heat, add 1 tablespoon butter and saute onion, stirring frequently until tender about 3-5 minutes.
  • Add zucchini stirring frequently to lightly saute for 2 minutes.
  • Add 1 tablespoon butter and then sprinkle dill weed. Stir the dill evenly throughout.
  • Remove from heat and serve. Enjoy!

2 tablespoons butter
1/2 cup vidalia onion (sliced or diced)
1 zucchini (medium sized)
3 tablespoons dill weed (freeze dried or fresh)
1 dash salt (to taste)
1 dash black pepper (to taste)
