Slow-Cooker Easy Multi-Bean Soup image

Steps:

  • In 5- to 6-quart slow cooker, mix all ingredients except tomatoes.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Stir in tomatoes. Increase heat setting to High; cover and cook about 15 minutes longer or until hot.

1 package (16 to 20 oz) 15- or 16-dried bean soup mix (2 1/4 cups), sorted, rinsed
4 medium carrots, chopped (2 cups)
3 medium stalks celery, chopped (1 1/2 cups)
1 large onion, chopped (1 cup)
2 tablespoons tomato paste
1 teaspoon salt
1 teaspoon Italian seasoning
1/2 teaspoon pepper
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained

Crock-Pot 16 Bean Soup image

Steps:

  • 1) Combine 16 bean soup mix, bay leaves, oregano, chicken stock and water (liquid should cover mixture by 1-2 inches) in crock-pot. Cook on high for 2 hours.
  • 2) Add remaining ingredients and shift cooker to low and cook for additional 3 hours. For more zing, add cayenne or crushed red pepper when adding second set of ingredients.
  • 3) Serve as complete meal or over rice. Freezes well.

Steps:

  • 1. combine 1st 5 ingredients. Liquid should cover Beans by about 1"-2" in your crock pot
  • 2. Cook in crock pot on "HIGH" for 2 hrs.
  • 3. Add remaining ingredients, "reduce heat to Low", cook for additional 3 hrs or more. (5 hrs total cooking time)Beans should all be tender.
  • 4. Optional: For more ZING, add Ceyenne or crushed red pepper, when adding 2nd set of your ingredients.
  • 5. Meal Suggestion: (1) For a complete meal, Serve over cooked rice. (2) Serve Soup with Hot Buttered French bread

1 pkg 16 bean soup ( in the grocer isle with the beans)
3 bay leaves
1 Tbs crushed oregano
2 cans chicken stock
additional water to cover beans
1 C chopped celery
3 carrots, chopped
1 lg onion chopped
3 cloves garlic sliced
1 lb ham hocks or chopped ham
2 cans stewed tomatoes or diced tomatoes
option: salt and pepper (season to taste)

Steps:

  • Place 15-bean soup mix in a large bowl and cover with several inches of cool water; soak in refrigerator 8 hours to overnight. Drain and rinse.
  • Place 15-bean soup mix, ham bone, cooked ham, chicken broth, water, onion, carrots, great Northern beans, garlic, black pepper, salt, and bay leaf in a slow cooker; stir to combine. Cook on Low for 8 to 10 hours.
