LEE HONG'S CUCUMBERS
I got this from the Best of Bridge cookbook. It is a real hit at BBQ's as well as a side dish on a hot summer day. I make a big batch because people always want to take leftovers home! Tastes even better the next day, but the cucumber will be a bit wilted, but doesn't affect the taste. Enjoy! Edited to include: You can also add some fresh dill weed to the dressing. It adds a nice flavor. Edited June 2011 to include: You can also try using Splenda in place of sugar. It doesn't alter the taste too much. I have successfully used it in place of sugar. It depends on your tastebuds.

Steps:
- Slice cucumbers as thin as you can.
- Arrange cucumber slices in a bowl in layers, salting between layers. Sprinkle the cukes with salt, don't over salt them.
- Let stand 2 hours.
- Rinse with cold water until no salt remains. Make sure you rinse salt out of cukes extremely well or the salty taste will stay.
- Drain well and pat dry.
- Thinly slice red onions and break apart rings.
- In a separate bowl, mix sugar and oil, then add vinegar and water.
- Add more sugar or vinegar if not sweet or sour enough.
- It should have a nice tangy taste.
- Add onions and cucumber to vinegar dressing.
- Mix well.
- Cover and refrigerate for a couple hours, stirring frequently to blend flavors.
- Serve with steak, chicken, at a BBQ or with a deli style sandwich!
- This doubles and even triples well! This makes alot of dressing for the cukes, but I like it that way so the cukes are totally immersed and absorb the flavor.
- Edited to add: you can also add fresh dill weed to the vinegar dressing if you wish.

LEMONGRASS CUCUMBERS
These are tangy and refreshing! A great way to cool down spicy dishes. A touch of sesame enriches their flavor. From Fields of Greens cookbook.

Steps:
- Peel the cucumber, cut in half lengthwise and scoop out seeds. Slice diagonally 1/4" thick.
- Toss with the salt, set aside for 10 minutes, then drain.
- Toss the cucumber slices with the vinegar, oil, sugar and pepper flakes.
- Serve immediately or refrigerate and serve.
- Enjoy!

CUCUMBERS

- Maybe what they need is dill seed. Try sprinkling some on sliced or marinated cucumbers or in a cucumber salad. Or maybe try celery seed.
- Put the cucumbers, whole, in a basin of cold water in the refrigerator. About an hour before you want to eat the cucumbers, peel and slice them, sprinkle them with salt, and put them back in the water. Drain before serving. As an alternative, you can make soup.
- If the cucumbers are nice, firm, unshriveled, and dark green, they will keep for at least a week. If they are losing their freshness, you'd better hurry up and make something. There's nothing that tastes more summery than a gazpacho. Most basic cookbooks will have a recipe. If that isn't interesting enough for you, how about this Indonesian condiment? It goes well with curries or simple grilled meat (or tofu or tempeh).
- Another solution for excess cucumbers is to slice them fairly thick-1/2 inch or so-bread them, if you wish, and sauté them until brown. Turn the cucumbers over and brown the other side. You could do the same with green tomatoes and wow your friends and family with a "hot salad." Or do the obvious and make pickles. It's simpler than you think. Consult a basic cookbook.

Really great appetizer for the summer or anytime. Every time I have served these everyone wants the recipe...and they're so easy! Just be sure to refrigerate the cream cheese mixture overnight!

- In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
- Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

- In a large bowl, combine mayo, sugar, vinegar and salt. Mix until disolved.
- Add the peeled and sliced cucumbers into bowl and fold until mixture covers the cucumbers. Chill in refrigerator for at least 1 hour. As the cucumbers sit they will make more liquid.
- Best if made the day of the event. You can make it the night before, but I wouldn't recommend making it any sooner. They cukes will get soggy.

- Cut bread into rounds with cutters- 1 1/2- 2" diameter.
- Slice cucumbers into 1/8" slices.
