- For garlic & herb, stir in crushed garlic clove, snipped chives, a little lemon juice and fresh ground pepper.
- For the fish dip, take the chopped smoked salmon and a few sprigs of chopped dill and stir in the base dip.
- For spice-lovers, stir a little chilli dipping sauce, to taste, through the base mix.
- Go Greek and stir through grated cucumber, and a handful of chopped mint.

Steps:
- Mix sugar, cornstarch & salt. Gradually mix in the fruit juices & stir to combine.
- Cook in top of double boiler over simmering water for 20 min, stirring often.
- Remove 1/4 cup of hot mixture & whisk into beaten eggs. Return mixture to pan & cook 5 min more.
- Beat hot mixture into cream cheese & refrigerate till well-chilled.
- Notes: My mind races w/endless suggestions! Drizzle custard over your favourite pound cake, angel food cake or bundt cake you want to glaze * Serve as dip using graham crackers or gingersnaps as dippers * Use as dressing for fruit salad * Use as sauce for cheesecake, other desserts & in parfaits * Put a spoonfull on top of hot oatmeal & watch your kids stir it in & make quick work of eating their breakfast. - Bring milk and sugar to a simmer in a saucepan without stirring. Whisk yolks in a bowl until blended, then gradually whisk in hot milk mixture. Return to saucepan and cook over moderate heat, stirring constantly, until sauce thickens enough to coat back of a wooden spoon and registers 170°F. on an instant-read thermometer.
- Immediately pour sauce through a fine sieve into a metal bowl and place bowl in a large bowl of ice and cold water. Stir in vanilla and whisk custard occasionally until cool, then cover surface with a piece of wax paper to prevent a skin from forming.
- Chill until cold.
