BARBECUED PRAWNS (SHRIMP) WITH MUSTARD DIPPING SAUCE

Super easy and makes a great entree/appetizer for an outdoors meal. Can be cooked also in a large pan or grilled. You can add some yogurt or sour cream to the dipping sauce if you wish- if you do cut back on the lemon juice

Barbecued Prawns (Shrimp) With Mustard Dipping Sauce image

Steps:

  • To make the sauce- stir together the sauce ingredients in a small bow. Set aside.
  • For the prawns- Mix together the coriander, cumin, pepper and salt in a large bowl. Add the prawns, toss to coat.
  • Preheat the barbecue. Thread the prawns onto skewers and cook on both sides until done- SHould take less than 5 minutes to cook.
  • Serve warm or chilled with the mustard dipping sauce.

24 large raw prawns, peeled and deveined (I like to leave the tails on)
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1/4 teaspoon pepper
1/8 teaspoon salt
bamboo skewer
3 tablespoons Dijon mustard
1 3/4 tablespoons lemon juice
1/2 teaspoon coriander
1/2 teaspoon cumin
1/4 teaspoon pepper

Good friends of ours prepared these delicious kebabs for us and were nice enough to give me the recipe. My first experience with wasabi and I liked it.

Prawn and Scallop Kebabs with Wasabi Dipping Sauce image

Steps:

  • To make the Wasabi Dipping Sauce: mix together all the sauce ingredients in a bowl and whisk to combine; set aside.
  • Alternate the scallops and prawns on skewers.
  • Brush the scallops and prawns generously with the wasabi dipping sauce.
  • Grill over high heat for 2 minutes; turn skewers, brush with sauce and grill for 2-3 more minutes or until shrimp are pink and scallops are firm.
  • Be careful to not overcook.
  • Serve with remaining sauce for dipping.

Salt and Pepper Prawns with Lime and Chilli Dipping Sauce image

Steps:

  • For dipping sauce, combine sugar and vinegar in a small frying pan and stir over a low heat until sugar dissolves.
  • Cool, then add reamaining sauce ingredients.
  • Season to taste with salt and pepper.
  • Dry roast pepper and peppercorns in a small pan over low medium heat for 2 minutes or until fragrant, then cool.
  • Grind roasted peppers, salt and rice flour until coarsely ground.
  • Place prawns in bowl and sprinkle with pepper mixture to coat.
  • Heat oil in wok and fry prawns in batches for 2 minutes or until cooked through.
  • Drain on absorbent paper.
  • Serve prawns immediately with dipping sauce and lime wedges to the side.

1 tablespoon szechwan pepper
1 teaspoon black peppercorns
2 teaspoons flaked sea salt
2 tablespoons rice flour
750 g medium green king prawns, shelled and cleaned leaving tails intact
1/2 cup peanut oil
70 g brown sugar
1 tablespoon rice vinegar
1 clove garlic, crushed
1 small fresh red chile, finely chopped
1 tablespoon chopped coriander leaves
1/3 cup lime juice, plus wedges to serve

ULTIMATE DIPPING SAUCE

Originally made this for onion rings, but it goes great with anything--fried, fish sticks, even grilled meats, shrimp, etc. The ingredients seems a little off, but combined it is excellent--slightly sweet and pretty spicy.
