CLASSIC 7-UP POUND CAKE
This is an outstanding pound cake and one I have made many times in the past, follow the steps properly and you will have pound cake like no other!

Steps:
- Set oven to 300 degrees F.
- Grease and flour a 10" tube pan.
- In a large bowl combine butter, shortening, 3 cups sugar (use only 3 cups sugar) vanilla and almond extract; beat using an electric mixer until light and fluffy (about 5 minutes).
- Sift the flour and salt together.
- Add eggs, 7-up, and the flour mixture to the butter mixture, using the following directions:.
- This method must be followed; add 1 egg in at a time; then add a bit of Seven-Up, then a bit of the flour mixture, then a bit more of Seven-Up; repeat until all the eggs, flour mixture and 1 cup Seven-Up is used up (you will use the remaining 1/4 cup for glaze).
- Spoon mixture into prepared baking pan.
- Bake at 300 degrees for 1 hour and 40 minutes, or until cake tests done.
- Cool in pan on a wire rack for 10 minutes.
- Remove from pan.
- Mix the remaining 1/2 cup sugar and the 1/4 cup Seven-Up soda.
- Spread the glaze mix over cake.

- Preheat oven to 350°. Grease and flour a 10-in. fluted or plain tube pan., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7UP, beating well after each addition. , Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely., For glaze, in a small bowl, mix confectioners' sugar, lemon juice and enough 7UP to reach desired consistency. If desired, stir in zest. Drizzle over cake.

- Preheat oven to 325 degrees F. Grease and flour 12-cup bundt pan.
- Combine flour and salt in bowl and set aside.
- Combine remaining ingredients EXCEPT 7-up in large mixer bowl; beat at medium speed until light and fluffy, scraping sides occasionally, 5 minutes.
- Reduce speed to low; add dry ingredients and 7-Up. Mix well.
- Pour into prepared bundt pan.
- Bake 1 1/2 hours @ 325 or until toothpick inserted in center comes out clean.
- Cool in pan 15 minutes. Remove from pan and cool completely.

This was a recipe that I found and tried a week ago, I tried the original recipe tweaked it and here's my versions. - Preheat oven to 325 degrees F (165 degrees C). Generously grease a fluted tube pan (such as Bundt®).
- Beat white sugar and butter together in a bowl using an electric mixer until creamy and smooth; add eggs, 1 at a time, mixing well after each addition. Stir flour, 1 cup at a time, blending well after each addition until batter is smooth; stir in lemon extract. Mix lemon-lime beverage into batter and pour into the prepared pan.

- Preheat oven to 325 degrees fahrenheit. Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add eggs, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bowl, then mix briefly. Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly. Remove cake from oven and invert pan until cake drops out. Slice and enjoy plain, with a freshly brewed cup of coffee-- or add a glaze if you wish. This would be a perfect cake to serve with fresh strawberries (in season, of course) and whipped cream. It's moist but dense enough to not become soggy.

- They called the 7-Up bottling company and they did not even know about it. Someone developed this on their own and never let the company know about it. BTW 7-Up comes from the popular card game in the 1930's.
- Cream the margarine, shortening and sugar together beating until light and fluffy.
