Steps:
- Combine the farro with the stock or water in a large saucepan and bring to a boil. Reduce to a simmer, cover and cook until tender, about 30 minutes; drain off any excess liquid. Season with salt and pepper and toss with 1 tablespoon of the olive oil. Set aside to cool.
- Preheat the oven to 400 degrees F.
- Toss the squash with the remaining 2 tablespoons olive oil, a few pinches of salt, a few turns of pepper and a pinch of crushed red pepper. Roast until tender, 25 to 30 minutes. Let cool.
- Make the dressing by combining the yogurt, basil, mayonnaise, white wine vinegar, Dijon and garlic in a medium bowl. Season with salt and pepper.
- In a large glass serving bowl, layer the farro, kale, squash, prosciutto, shallots, dressing, Parmesan and almonds. Finish with the remaining basil and a few turns of pepper.

- Heat oven to 375°F; grease oblong baking dish, 12 x 7 1/2 x 2-inch.
- Sauté beef and onions until brown; drain. Stir in taco seasoning mix, tomato sauce, beans, chilies and olives.
- Mix 1 egg, baking mix, cornmeal, milk and oil until moistened; beat vigorously 30 seconds. Spread dough in dish. Spoon beef mixture over dough.
- Mix sour cream, 1 egg and cheese. Spoon over beef mixture. Bake 30 minutes. Let stand 10 minutes before cutting.

- Coat slow cooker with nonstick cooking spray. Cover base and 1" up sides with 4 tortillas, overlapping as necessary.
- Spread 1 can beans, 1 can tomatoes, 1/2 of the corn, and 1/3 of the cheese on top of tortillas. Sprinkle with 1/2 of the chili powder.
- Cover with 4 more tortillas, and repeat layers, topping with 4 remaining tortillas. Sprinkle with remaining cheese and a dash of chili powder.
- Cook on "low" for 8 hours.
