CLASSIC MACARONI SALAD

- Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat. , Refrigerate until serving. Garnish with egg and paprika.

FAST, EASY, DELICIOUS MACARONI SALAD - EVEN YOUR KIDS WILL LOVE
My father made this recipe for me years ago and I absolutely loved it! I make it for my children and my younger siblings and they all love it too. This macaroni salad goes great with just about any type of meat whether it's grilled, baked, or fried. Also, makes a great snack when you have leftovers and don't feel like fixing anything.

Steps:
- Boil noodles like you normally would do. Until done. Drain the noodles. Put them in a large bowl and put in the fridge to cool. (Faster prep: Run them under cold water until cool then let sit so all of the water will drain).
- Mince pickles and black olives. (Faster & easier prep: Buy dill pickle relish and already chopped black olives).
- Chop green onions.
- After noodles are cool add mayonnaise (more or less to taste) & mustard (optional) and mix together.
- Add pickle, olives, & green onions and mix. (Can use more or less. I personally like a lot of pickles and little onion & olives).
- Add salt and pepper to taste.
- Put in the fridge to chill. (Sometimes you may need to add more mayo when ready to serve).
- Add the cheese when you are serving. (I let everybody add as much as they want. Makes it fun for the kids).
KID-FRIENDLY PASTA SALAD

- Cook the pasta according to the packet instructions. Then drain and rinse in cold water until cool. Set aside.
- Cut the bacon into 1/2-inch pieces and throw into a large skillet. Saute until slightly crisp, and then remove to a paper-towel-lined-plate.
- For the dressing, mix the mayonnaise, milk, vinegar, salt, and sugar if using in a small bowl.
- Stir together the pasta, dressing, tomatoes, bacon, Cheddar and green onions in a large mixing bowl. Taste for seasonings, adding more salt and pepper if needed.
- Stir in the basil at the end.
MACARONI SALAD WITH PICKLES
This recipe is easily multiplied for a crowd. Everyone in my family asks me to bring this to our functions. I even make it for weddings. Sometimes I use a mixture of different kinds of pasta, especially if I only have a little of this kind or that. Depending on what type of macaroni used, more dressing may be required. The recipe calls for red onion, but sweet onion is great, too.

- Cook pasta in a large pot of boiling water until al dente. Drain; rinse with cold water. Set aside.
- Meanwhile, place eggs in a saucepan, and fill with enough cold water to cover eggs completely by about 1 inch. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 20 minutes. Immediately remove from hot water and cool in an ice water bath. When cool enough to handle, peel and chop eggs.
- In a medium bowl, mix together mayonnaise, sour cream, dry mustard, sweet pickle juice, and celery seed. Season with salt and black pepper.
- In a large bowl, combine drained pasta, celery, onion, olives, sweet pickles, carrots, green pepper, and chopped eggs. Stir in dressing, and mix well. Refrigerate before serving.

CHICAGO MACARONI SALAD
My family is from Chicago. This is one of my grandma's best recipes that's been handed down. Kids love it because of the cheese cubes! It's a great potluck dish because it has a lot of color! I use salad macaroni because of its small size.

- Fill a pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the salad macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink, and rinse with cold water until chilled. Drain again to remove excess water.
- Place macaroni, broccoli, Cheddar cheese, green pepper, pickle relish, dill pickle, celery, black olives, green olives, green onion, carrot, and pimento in a salad bowl, and toss lightly to combine. In a bowl, whisk together the light mayonnaise, mustard, salt, sugar, and black pepper to make a smooth dressing; pour the dressing over the salad, and lightly mix to coat all ingredients with dressing. Refrigerate at least 4 hours to blend flavors before serving.

- Place water in a medium pot, the water doesn't have to cover the eggs...who knew? Boil eggs for 14 minutes. Peel eggs (see notes below for more tips!)
- Using the same water, boil the pasta. (Adding salt is optional.) Gradually add pasta, stirring to separate it and return to a boil. Boil uncovered, stirring occasionally until desired tenderness. Drain.
- In a large bowl, mix all chopped ingredients into the warm pasta: celery, green onions, chopped pickles, pickle juice, chopped eggs, black olives, mayonnaise, yellow mustard, sea salt, pepper, and chill for several hours or overnight. The warm pasta will absorb the pickle juice as it sits in the fridge, that is what makes it so good!
