Steps:

  • Combine the onion, tomatoes, and cilantro in a non-metal bowl. Whisk together the vinegar, sugar, pepper and salt; pour over the onion mixture, and toss to coat. Cover and refrigerate 2 to 4 hours. Drain right before serving.

ARUGULA & CHICKEN WITH PASTA

This recipe was developed by PASTA PRESS and printed in their magazine. This is one favorite impromptu dish during the summer months when arugula is plentiful. As the arugula threads its way through the pasta, its peppery flavor compliments the sweetness of the pan-roasted garlic and fresh tomatoes.

Arugula & Chicken With Pasta image

Steps:

  • Grill or bake the chicken breasts until medium-rare.
  • Slice the chicken breasts into bite-sized pieces and reserve.
  • Heat olive oil in a large stir-fry pan over high heat.
  • Add garlic and stir-fry until golden but not burn't, about 1 minute.
  • Immediately add tomatoes and chicken stock and heat to boil.
  • Reduce heat and simmer for 3 minutes.
  • Add arugula leaves and toss until they begin to wilt, about 30 seconds.
  • Immediately toss in the chicken and cook for 30 seconds.
  • Meanwhile, cook pasta in plenty of rapidly boiling, salted water until el dente.
  • Drain well, and immediately add to the sauce.
  • Toss thoroughly to entangle the arugula into the pasta strands.
  • (Timing is critical. Make sure the pasta will be done immediately after adding the chicken to the sauce.) Cook 1 to 2 minutes longer until all ingredients are heated through.
  • Serve immediately, sprinkling parmesan cheese over each serving.
  • Arugula is a peppery leafy vegetable resembling spinach leaves with ragged edges.
  • It is generally available during late spring and summer.
  • If it is not available, substitute fresh spinach or a 50/50 blend of watercress leaves and spinach.

1 lb boneless skinless chicken breast
2 tablespoons extra virgin olive oil
16 garlic cloves, chopped in large chunks
10 medium fresh tomatoes, roughly chopped
1 cup chicken broth or 1 cup dry white wine
2 quarts of tightly packed arugula leaves (about 4 bunches)
1/4 cup freshly grated parmesan cheese

My friend from Spain had me over for dinner, and her Abuela (gramma) made this for us. And this is what we had. WOW! It was sooo good, so I begged for the recipe.

Abuela's Chicken image

Steps:

  • Marinate the chicken for approximately 10 minutes in a bowl containing the green peppers, oregano, garlic, black pepper, olives, celery, parsley, coriander, and thyme.
  • In an iron pot, heat 3 tablespoons of oil, reserving 2 tablespoons for later use. Add sugar to heated oil and quickly stir. When sugar turns dark brown, add the chicken (without the vegetables), being careful with splattering oil. Stir, cover and let simmer at medium heat for 10 minutes, adding tablespoonfuls of water regularly to prevent it from burning. Add the vegetables. Add tomato paste and stir to combine. Add remaining water and bring to a boil. Add salt to taste.
  • Add the rice and stir often to avoid excessive sticking. Once all the water has evaporated, cover with a tight-fitting lid and simmer over very low heat. Wait 15 minutes, uncover and stir, before adding remaining oil. Cover and wait another 5 minutes. Taste rice for doneness; it should be firm but tender inside. If necessary, cover and leave another 5 minutes over very low heat.

Steps:

  • 1. Preheat the oven to 425°F.
  • 2. Heat the olive oil in a large skillet over medium heat. Add the prunes, apricots, cherries, pine nuts, and orange and lemon zests and cook, stirring, until the pine nuts turn golden and the fruits are browned in spots, 3 to 5 minutes. Add the port and cinnamon stick and cook until syrupy, about 5 minutes. Add the chicken stock and the chicken juices. Increase the heat to high, bring the sauce to a boil, and cook until reduced, about 5 minutes.
  • 3. Place the chicken pieces in a baking dish that can hold them snugly. Pour the sauce over them, scraping up all the fruit and liquid from the bottom of the skillet and turning the chicken to coat it with the sauce. Bake the chicken until it is warmed through and the sauce is further reduced, about 10 minutes. Transfer to plates and serve at once.
