Steps:
- This and other similar fruit drinks, which translate literally as "fresh water," are served all over Mexico and they're a cinch to replicate at home. The key is to strain the pulpy fruit to make a clearer liquid. Instead of melon, you could use strawberries, pineapple, or mango -- any fruit that is soft enough to puree.
- Puree cantaloupe and pour through a fine sieve to eliminate pulp. In a pitcher, mix strained fruit puree with water and season with sugar and lime juice, to taste.
AGUA FRESCA

Steps:
- Puree fruit in a blender, adding just enough water or water and ice to blend. Strain puree through a fine sieve if it is fibrous or seedy.
- Put puree in a pitcher, adding more water or water and ice to make a total of 8 cups. Stir in sugar and mint, if using, and lime juice to taste. Serve.
AGUA DE TAMARINDO
Steps:
- Peel the tamarind pods by hand and discard the outer shell. It's okay if there are still little bits of shell stuck to the flesh, as the beverage will be strained.
- Put the tamarind flesh in a saucepan, seeds and all. Add the water, place over medium heat, and bring to a boil. Lower the heat and simmer, stirring occasionally, until the pulp is very soft, about 45 minutes.
- Strain through a fine-mesh sieve into a pitcher, pressing the solids with the back of a wooden spoon to extract as much liquid and tamarind pulp as possible. Add the sugar and stir until it dissolves. Taste and add a little more sugar if you like. Let cool to room temperature, then refrigerate until completely chilled. Serve over ice.
AGUA DE ARROZ (MEXICAN RICE WATER)
There is a small restaurant that I like to go to whenever I have the chance. Unfortunately, since it's about three hours away, I don't get to do so very often. One of the biggest draws for me is their Agua de Arroz, which means "Rice Water" in spanish. But to call it just simple rice water does it such a disservice. It is soooo much more than that! It is a sweet, creamy dessert drink that truly "makes" the meal. I tried it on a whim the first time. I had just walked away from the counter when I took a sip. I whirled around to my sister, who was right behind me, and said, "You have GOT to try this stuff!!!". So today I went searching for a recipe for Agua de Arroz...and found this. It haven't tried this specific recipe, but I will be soon! It sounds very much like the one that I had. NOTE: After trying this...it wasn't anything like the one I was looking for. It turned out to be this gooey, gelatinous...bleah. Since I can't delete the recipe, I thought I'd warn folks. Don't waste your ingredients.

- Mix all together ingredients and let stand 3 hours.
- Simmer for 1/2 hour.
- Let cool, then puree in a blender and strain through a cloth or fine-mesh strainer.
- Taste for sweetness and add sugar if necessary.

- Rinse flowers in cold water. In a large saucepan, combine 3 cups water, flowers and lime zest. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes., Remove from heat; let stand 15 minutes. Strain mixture, discarding flowers and zest; transfer to a large bowl. Add sugar and remaining water, stirring until sugar is dissolved. If desired, stir in rum. Refrigerate until cold. Add mint sprigs if desired.

Steps:
- Place 6 cups of water in a large saucepan; bring to a boil. Stir in the hibiscus petals, cinnamon, cloves, nutmeg, and allspice. Reduce heat to medium-low, and gently simmer until the water has turned a deep red, 30 to 45 minutes.
- Stir the chopped piloncillo into the hibiscus water until dissolved, then set aside to cool 15 minutes. After cooling, strain the warm liquid into a 1 gallon pitcher through a wire mesh strainer. Squeeze as much liquid from the petals as you can, then discard the petals. Stir in the white sugar until dissolved, then pour in enough cold water to fill the pitcher. Serve immediately or let stand overnight for best taste.

- Finely chop two cups of the watermelon, and set aside.
- Place remaining two cups watermelon in a blender; process until smooth.
- Pour pureed watermelon through a sieve into a pitcher, and discard the solids.
- Add water, sugar and lime juice; stir until sugar dissolves.
- Stir in chopped watermelon.
- Cover and chill at least one hour.

Steps:
- Stir the sugar and water together in a large pitcher until the sugar dissolves. Measure out 1 cup. Puree the fruit and the 1 cup sugar water in a blender. Pour the mixture through a fine-mesh strainer back into the pitcher with the sugar water, mashing with a whisk or wooden spoon to eliminate any pulp.
