I like to take these to school for the fourth graders I teach...they love them. The colorful marshmallows make these candies bright and pretty to serve-to all ages!

- In a heavy saucepan, melt candy coating and peanut butter over low heat. Remove from the heat; stir in the remaining ingredients. Drop by tablespoonfuls onto waxed paper.

BUTTERSCOTCH BARK
These bark cookies have a coconut/pecan/chocolate chip topping. They are so easy to make, which is a good thing because they don't last long! The recipe is similar to one I found in Martha Stewart's Food Everyday magazine. This recipe is a great way to use up those Southern U.S. pecans.

Steps:
- Preheat oven to 350.
- Spread pecans and coconut on a baking sheet.
- Bake until coconut is golden- about 5 minutes.
- Cool.
- Toss mixture with chocolate chips.
- In a mixing bowl, whip the butter and sugar together until creamy.
- Spread the mixture generously and evenly on the graham cracker squares.
- Line a 10 X 15 rimmed baking sheet with foil.
- Line with the buttered graham cracker squares to fit in the pan in a single layer.
- Bake until bubbly- about 10 minutes.
- Sprinkle the nut/coconut/chocolate chip mixture over the hot graham crackers, and press gently.
- Cool and break into cookie size pieces.

- In a large skillet, melt butter over medium heat. Stir in brown sugar and spices; bring to a boil. Cook and stir until sugar is completely dissolved, about 3 minutes. Stir in pecans until coated. This is a great recipe for the holidays and to give as a gift because it is relatively easy to make. Use your favorite bittersweet chocolate for this one since the chocolate is what really makes this great. I don't remember where this recipe came from but you can mix it up by using a different type of nut or even using more or less chocolate.

- Finely chop your chocolate so that it melts evenly and quickly.
- Add your chocolate to a double broiler until the chocolate is warm and melty. You don't want to get the chocolate too warm and it is not necessary for this recipe.
- Once the chocolate is melted, mix in your almonds.
- Stir well to ensure the almonds are completely coated.
- Once well coated place the chocolate mixture to a baking sheet covered with wax paper.
- Spread the mixture out evenly to cool.
- It takes about two hours or so to completely cool enough to break the bark.

- Preheat oven to 350 degrees.
- Line a cookie sheet with foil and lightly grease.
- Place graham crackers on the cookie sheet in one layer.
- Sprinkle pecans evenly over the graham squares.
- In a small sauce pan melt the unsalted butter.
- Add brown sugar to the pan and stir until mixture begins to boil.
- Pour sugar mixture over pecans and graham squares.
- Bake in oven for 10 minutes.
- Remove pan from oven and place into freezer for 1 hour.
