GRILLED NECTARINES WITH MASCARPONE

Grilled Nectarines with Mascarpone image

Steps:

  • Preheat the grill to medium-high heat.
  • Brush the nectarines with the amaretto. Grill until golden, tender and you have achieved beautiful grill marks, about 2 to 3 minutes on each side, 6 minutes total. Remove from the grill and let cool slightly.
  • Add the mascarpone, whipping cream, sugar, lemon zest, and vanilla to a large mixing bowl and beat with a hand mixer until soft peaks appear.
  • Plate the grilled nectarines on a platter and top each with a dollop of whipped mascarpone and a sprinkling of chopped pistachios. Serve immediately.

3 firm yet ripe large nectarines, pitted and halved
1/4 cup amaretto
1/2 cup mascarpone cheese, chilled
1/2 cup whipping cream, chilled
1 tablespoon sugar
1 teaspoon vanilla extract
1 teaspoon fresh lemon zest
1/4 cup chopped pistachios

AMARETTO PIZZELLES WITH CHERRY JAM

Pizzelles are a traditional Italian cookie that are flat, crisp and resemble a waffle. They are very pliable as soon as they come out of the pizzelle iron, making them easy to form into different shapes. In this recipe, the cookie is rolled into a tight cigar shape and filled with cherry jam for a deliciously crisp, sweet bite.

Amaretto Pizzelles with Cherry Jam image

Steps:

  • Bring the cherry jam to a simmer in a small saucepan over medium-high heat. Whisk the cornstarch and water in a small bowl to make a paste, then stir into the jam. Bring to a boil and cook, stirring, until slightly thickened, 1 to 2 minutes. Transfer to a bowl and let cool to room temperature.
  • Whisk the flour, baking powder, cinnamon and salt in a medium bowl. Whisk the eggs and granulated sugar in a large bowl, then add the vegetable oil, amaretto and almond extract and whisk until combined. Add half of the flour mixture to the egg mixture and whisk to combine. Add the remaining flour mixture and whisk until smooth; the mixture should look like thick pancake batter.
  • Heat a pizzelle iron to medium high and lightly brush with vegetable oil. Working one at a time, add 1 tablespoon batter to the center of the iron, then press and cook until golden brown, 45 seconds to 1 minute. Remove the cookie and immediately roll it around a chopstick to form a thin cylinder. Place seam-side down on a rack, then remove the chopstick. Repeat with the remaining batter. Let the cookies sit at room temperature until crisp, about 2 hours.
  • Transfer the jam to a piping bag or resealable plastic bag; snip off a corner. Pipe the jam into both ends of the cookies to fill the center. Dust with confectioners' sugar.

AMARETTO NECTARINES

This is a recipe I saw on a cooking show but I have "tweeked" it a lot. Everyone who I have made this for rants and raves about it. You can omit the amaretto or substitute another liquor if you like. I sometimes use a soy ice cream substitute for my lactose intolerant friends. If I have them on hand, I throw in a few blueberries or blackberries for color. Very easy recipe with lots of kudos for the cook!!

Amaretto Nectarines image

Steps:

  • Cut nectarines in half around the center.
  • Dig out pit with a spoon.
  • Place cut side up on a baking sheet.
  • Drizzle the honey and lime juice over the nectarine edges and in the pit cavity. Bake in a 325 oven for 30-45 minutes depending on the ripeness of the nectarines (check often).
  • Remove from oven and place in individual serving bowls.
  • Let cool a few minutes.
  • Add a scoop of ice cream to each bowl and a splash of amaretto.
  • Grate chocolate over top.
  • Enjoy!

Steps:

  • Place quartered nectarines in a large resealable bag.
  • In a small bowl, stir together amaretto, orange juice concentrate, and cloves. Pour over the nectarines and marinate in the refrigerator for 1 to 4 hours.
  • Meanwhile, stir together mascarpone, 2 tablespoons of marinade from the nectarines, and 1/4 cup of the slivered almonds. Refrigerate until ready to use.
  • Set up grill for direct grilling over medium heat and oil the grates.
  • Remove nectarines from marinade and place on hot grill. Cook for 3 to 4 minutes per side or until grill marks appear and nectarines have begun to soften.
  • Serve warm with the almond mascarpone and garnish with the remaining toasted almonds.
  • Cook's Note: Make this kid-friendly by marinating 3 quartered nectarines in 2 tablespoons orange juice concentrate, 1/2 cup ginger ale, and 3 cloves. Continue the recipe as written.

Steps:

  • To make the topping: Stir the flour and sugars in a medium bowl to blend. Add the cookies and almonds and mix well. Add the butter and rub in until moist clumps form.
  • To make the filling: Preheat the oven to 350 degrees F. Butter a 13 by 9 by 2-inch glass baking dish. Stir the sugar and flour in a large bowl. Add the nectarines and blueberries, and toss to combine. Stir in the liqueur.
  • Spoon the fruit mixture into the prepared dish. Sprinkle the cookie topping over. Bake until the nectarines are tender and the topping is golden and crisp, about 45 minutes. Cool at least 10 minutes. Spoon the warm crisp into bowls. Top each with a dollop of mascarpone cheese and serve.

Baked nectarines with almonds & Marsala image

Steps:

  • Heat oven to 180C/160C fan/gas 4. Sit the nectarine halves snugly in a baking dish, cut-side up. Put the amaretti biscuits into a large bowl and use the end of a rolling pin to bash into crumbs. Add the softened butter, ground almonds, caster sugar and egg, and stir together.
  • Push spoonfuls of the mixture into the cavities of the nectarines, piling more on top until the mixture is evenly divided among them. Scatter with almonds, then carefully pour the Marsala into the dish through a gap between the fruit so the topping doesn't get soggy. Bake for 40-50 mins until golden and crisp, and the fruit is soft. Eat warm with the juices spooned over, and a dollop of Greek yogurt or crème fraîche alongside.
