Steps:
- Heat a large pot over medium heat and add oil. Add beef and sprinkle with baking powder. Brown beef, stirring to break up into smaller chunks, until no longer pink, 5 to 10 minutes. Using a slotted spoon, remove beef to a bowl.
- Add onions to pot and turn heat down to low. Cook, stirring occasionally, until soft, 8 to 10 minutes. Stir in chile powder, cumin, smoked paprika, cayenne and oregano and cook for another 2 minutes to bloom. Add garlic and saute for 30 more seconds. Add beef stock, demi-glace, tomatoes and beans. Add beef back in along with any reserved juices and simmer, partially covered and stirring frequently, for 2 hours. Season to taste with salt and pepper.
- Garnish with scallions, cilantro, sour cream, pickled jalapenos and aged Cheddar.

- Cook ground beef, onion and green pepper in large skillet over medium heat 5 minutes or until beef is no longer pink; pour off drippings. Add tomatoes, water and taco seasoning; simmer 5 minutes, stirring occasionally.
- Toss pasta with meat mixture. Spoon 3 cups of mixture into an 11x7-inch baking dish. Sprinkle with 1 cup cheese; top with remaining meat mixture. Cover with foil; bake in preheated 375 degrees F oven 30 minutes. Uncover; sprinkle with remaining cheese. Return to oven 5 minutes or until cheese is melted.

- Fry bacon in a large, deep heavy pot over medium heat.
- When the bacon has rendered most of its fat, remove the pieces with a slotted spoon, drain on paper toweling and reserve.
- Add the onions and garlic to the bacon fat and cook until the onions are translucent.
- Add the pork and beef to the pot.
- Break up any lumps with a fork and cook over medium-high heat, stirring occasionally, until the meat is evenly browned.
- Stir in the remaining ingredients except the beans and the bacon.
- Bring to a boil, then lower the heat and simmer, uncovered, for 2 hours.
- Stir occasionally.
- Taste and adjust seasonings.

- 1. Cook the macaroni until tender.
- 2. Brown the ground beef and drain off the excess grease.
- 3. Heat the chili to 165°F.
- 4. In a large pot combine the macaroni, ground beef, and all remaining ingredients together. Heat to 165°F and serve.

- Heat the oil in a large pot or Dutch oven medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened, 3 to 4 minutes.
