Stir Fry Beef and Vegetables image

Steps:

  • Toss beef in bowl with soy sauce and sherry.
  • Cover and marinate for 30 minutes.
  • Heat oil in wok, or wide frying pan.
  • Add garlic and ginger and saute over high heat.
  • Add drained beef (reserve marinade).
  • Stir fry until meat is brown.
  • Add scallions, celery, carrots, broccoli and mushrooms.
  • Cover and steam about 5 minutes.
  • Mix water, cornstarch, sesame oil and marinate in small bowl; pour into pan.
  • Heat to boiling.
  • Cook until thickened.
  • Serve over rice.

1 lb lean beef, thinly sliced (Slightly frozen beef is easier to slice)
1/4-1/3 cup light soy sauce
1/4 cup sherry wine or 1/4 cup cooking wine
1 cup green onion, sliced
1 cup celery, sliced diagonally

Korean Vegetable-Beef Stir Fry image

Steps:

  • Slice beef across the grain into bite-size strips. (If beef is partially frozen it is easier to slice).
  • Combine green onions, soy sauce, garlic, sesame oil, sesame seed, red pepper flakes, sugar and pepper; add meat and marinate 30 minutes at room temperature.
  • Drain meat, reserving marinade.
  • Dissolve cornstarch in water and add to reserved marinade, mixing well.
  • Preheat wok or large skillet over high heat; add 1 tablespoon oil, then add carrots and stir fry 3 minutes. Add broccoli and cauliflower slices and stir-fry 2 minutes (until vegetables are crisp-tender). Remove vegetables and keep warm.
  • Add remaining oil to pan.
  • Add half the beef to hot pan and stir-fry 2-3 minutes (until brown). Remove beef and stir-fry remaining meat. Return all meat to pan.
  • Stir marinade a little and pour into skillet or wok. Cook and stir until thickened and bubbly. Stir in the vegies. Cover and cook 1 minute.
  • Serve over hot rice.

  • In a large nonstick frying pan over medium-high heat, fry onion in oil until edges are nicely browned. Add garlic, ginger, and green chile and stir for 1 minute.
  • Mix ground spices with water to form a paste; add to onion mixture. Stir briefly until spices release their fragrance.

ANGLO-INDIAN BEEF (OR LAMB) STIR-FRY

From "5 Spices, 50 Dishes" by Ruta Kahate. You can use raw beef for this, but the far more useful trick is to use leftover beef or lamb roast. (Author suggested beef roast, but I tried it with lamb and it was great). I think you could also use rare deli beef also, for a quick meal. And I'll make potatoes like this even if not making the rest of the dish. This is a popular dish reflecting the influence of the many cultures that colonized India.

Anglo-Indian Beef (Or Lamb) Stir-Fry image

Steps:

  • If using raw beef, freeze 20 minutes and slice paper-thin. (I would buy beef sliced for bulgogi). Rub the beef with the vinegar, 1 tsp salt and 1/2 tsp turmeric. (With leftover roast, I omitted the salt, but used the turmeric and vinegar. I also sliced it somewhat thicker).
  • Bring the whole potatoes to a boil in slightly salted water to cover. Boil for 5 minutes, then remove from heat and let sit in the hot water for 15 minutes. The potatoes will be perfectly done. (Or cook potatoes by your preferred method).
  • Peel the potatoes and cut into 6 to 8 wedges each. Coat with the remaining 1/4 tsp turmeric and 1/4 tsp salt.
  • Heat 3 tbl oil in a large wok and fry the onion and ginger until slightly softened.
  • Add the cayenne and the marinated beef (I also added the marinade). Cook over high heat for 5 to 8 minutes or until tender. If not sufficiently tender, add 1/2 cup water and cook over medium-low heat until it's done to your likeness. (With the leftover roast, you really just want to get it warmed through, so watch your cooking time).
  • Meanwhile, heat the remaining 3 tbl oil in a large skillet and gently fry the potato wedges over low heat (I used medium heat) until golden brown and crisp.
  • Serve meat with the potato wedges. To be authentically Anglo-Indian, serve some ketchup on the side.

Lamb Bhutuwa (Nepali Lamb Stir-Fried in Himalayan Spices) image

Steps:

  • In a large bowl, combine two tablespoons of oil, one tablespoon of lemon juice, 1/2 teaspoon of turmeric, salt and pepper into a paste.
  • Add lamb pieces and mix thoroughly to coat; cover, and let marinate for 30 minutes.
  • After marinating, drain the marinade and pat-dry lamb pieces.
  • In a processor, blend chopped onion, garlic, ginger, fresh red chilies, cumin and curry powder, asafetida, and turmeric into a smooth paste.
  • In a non-stick pan heat two tablespoons of oil.
  • Add dried red chilies and fry till dark.
  • Add spice paste; fry for another few minutes until the oil starts to separate from the spices.
  • Transfer marinated lamb to the pan, add salt and pepper and stir well to brown on high heat.
  • Reduce the heat to medium and continue to stir fry lamb until cooked tender.
  • It may require some broth or water to moisten, if it starts to burn.
  • Add green peas and green onions; stir for another two minutes.
  • Adjust seasoning with salt and pepper.
  • Drain excess oil, if necessary.
  • Serve with stir-fried vegetables and rice or roti (flat bread).
