ANTIPASTI POTATO SALAD

Steps:
- Soak the red onion in a small bowl of ice water, 10 minutes; drain and pat dry.
- Meanwhile, put the potatoes in a large saucepan; cover with cold water and season with 1 teaspoon salt. Bring to a simmer and cook until tender, 10 to 12 minutes. Drain and transfer to a large bowl. Add 1/4 cup olive oil, 2 tablespoons vinegar, the sugar, 1/2 teaspoon salt and a few grinds of pepper; toss until the potatoes absorb most of the dressing.
- Add the giardiniera, provolone, salami, artichoke hearts, olives and red onion to the bowl with the potatoes; toss. Let cool to room temperature.
- Drizzle the potato salad with the remaining 3 tablespoons olive oil and 1 tablespoon vinegar. Add the basil and season with salt and pepper. Toss again just before serving.
ANTIPASTO
This recipe makes a huge amount. I can it and give it away as Christmas gifts. We usually make this as a group project to cut down on prep time and cost. The ingredient amounts may be altered proportionally as needed.

- In a large bowl with enough lightly salted water to cover, place the cauliflower, pearl onions, red bell peppers, green bell peppers, celery and cucumbers. Soak 8 to 12 hours, or overnight.
- In a small bowl with enough lightly salted water to cover, place the carrots. Soak 8 to 12 hours, or overnight.
- In a large saucepan, place the vegetable oil, vinegar, tomato paste and pickling spice. Bring the mixture to a boil. Drain and rinse the carrots, and place them in the mixture. Boil 10 minutes.
- Drain and rinse the vegetables in the cauliflower mixture. Place them into the saucepan. Cook 10 minutes, or until the cauliflower is tender but crisp.
- Stir black olives, green olives, mushrooms and tuna into the mixture. Remove the mixture from heat. Discard the wrapped pickling spice. While still hot, transfer to sterile containers and refrigerate.

OVEN-BAKED NEW POTATOES
These are very easy, and very versatile. I have two cans listed, if you want to make a smaller recipe then use 1 29 oz. can for an 8x8 pan.

- Preheat oven to 350 degrees.
- After your oven has preheated put your stick of butter in a 13x9 pan, and place it in the oven to melt.
- If you have the whole potatoes then slice your potatoes while you are melting your butter.
- After your butter has melted pull your pan out and carefully add your potatoes
- Gently stir potatoes around to coat potatoes with butter.
- Add salt and pepper to taste. You can add any kind of spices you want.
- Bake for 30-35 minute till golden brown.
ANTIPASTO POTATO BAKE

ANTIPASTO WITH NEW POTATOES
A slightly different antipasto, very tasty. Serve with crackers or as a side dish. I prefer to marinade it overnight and use fresh new potatoes

Steps:
- Cook potatoes, in lightly salted water, until almost tender (about 18 minutes), add carrots during last three minutes.
- Drain and cool slightly.
- Quarter the potatoes.
- In a large Ziplock bag or a large bowl combine the potatoes, carrots, brocolli and olives; set aside.
- ---------MARINADE------------.
- Combine oil, vinegar, parsley, oregano, thyme and red pepper.
- Whisk until well mixed.
- Pour 3/4 of the marinade over the vegetable mixture close bag (cover bowl) and place in refrigerator.
- In another bag put in the cheese and pour the remaining marinade over the cheese, seal bag and refrigerate.
- Chill both bags for 4-24 hours, turn a few times to evenly coat the contents.
- To Serve, line the serving plate with leaf lettuce.
- Using a slotted spoon transfer veggies to the platter.
- If using salami fold into quarters and arrange on the platter.
- Arrange cheese on the platter, you can sprinkle it over or place it in an artistic arrangement through the veggies.

- Bring to a boil; reduce heat and cover and cook for 15-20 minutes or until tender.

ROASTED VEGGIE ANTIPASTO
This is a delicious recipe and keeps for a long time, due to hot water bath processing. Great little jars for picnics, hostess gifts and entertaining. Scrumptious with crackers and cream cheese. I like mine a little on the sweet side and will occasionally add 1/4 cup brown sugar to the mix or use a sweet BBQ sauce. Alter the veggies as you like, trying to keep the overall quantity about the same.

- Preheat oven to 425 degrees F (220 degrees C).
- Spread green, red, and yellow peppers, green beans, white onion, garlic, broccoli, cauliflower, celery, and mushrooms onto several baking sheets and drizzle with olive oil; toss lightly to coat.
- Roast the vegetables in the preheated oven until slightly browned and softened, about 30 minutes, stirring occasionally.
- While vegetables are roasting, pour ketchup into a large pot over medium heat and stir in tomatoes, white vinegar, balsamic vinegar, salt, and black pepper; bring to a boil. Reduce heat to low and simmer for 5 minutes; stir in roasted vegetables, black olives, green olives, and basil. Simmer until cooked through, about 5 more minutes.
- Sterilize jars and lids in boiling water for at least 5 minutes. Pack the roasted vegetable mixture into the sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, for 24 hours. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
