Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
- Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
- Toss apples with lemon juice in a large bowl. Mix in sugar, honey, buttermilk, oil, eggs, and vanilla until combined. Stir in oats.
- Combine whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt in a smaller bowl. Gently fold flour mixture into the wet ingredients with a large spoon, until flour is just mixed in. Spoon batter into the prepared cupcake papers and sprinkle about 1 teaspoon crumb topping on top of each one.
- Bake in the preheated oven until tops spring back when lightly pressed, 20 to 25 minutes. Cool on a wire rack.

- Preheat oven to 350 degree F (175 degrees C). Line a mini muffin pan with paper liners.
- In a large bowl, cream together the butter or margarine and sugar. Add eggs, and beat until smooth. Blend in cinnamon, allspice, baking powder, and baking soda. Alternately add in a half cup of applesauce, one cup of flour, remaining applesauce, and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3's of the way full.
- Bake in preheated 350 degree F (175 degrees C) oven for 17 minutes.

- Preheat oven to 375 degrees.
- Coat 12 muffin tins with cooking spray or line with muffin cups.
- In large bowl, sift together flour; sugar; baking powder and salt. Make a well in center.
- In separate bowl, whisk together milk, lavender; butter and egg. Add milk mixture to flour mixture and stir by hand just until batter is evenly moistened. Fold in 1/2 cup of the apples.
- Fill prepared muffin tins about three-quarters full. Gently tap filled tins to release any air bubbles.

- Combine the butter, dried lavender and honey in the bowl of a food processor. Process for 30 seconds. Reserve 1/3 cup; wrap the remaining butter in plastic wrap. (Or if you're making the butter in advance, transfer the whole amount to a piece of plastic wrap. Fold enough wrap over the butter so that you can use it to help mold the butter into a log; roll and twist the wrap on the ends to seal. Refrigerate or freeze.).

- Heat oven to 400°F.
- Grease bottoms of 12 muffin cups or line with baking cups.
- Place 2/3 cup sugar and lavender in food processor; pulse 30 to 60 seconds (pulse longer for a more intense lavender flavor).
- Sift through strainer into medium bowl to remove any large pieces of lavender.
- Whisk in flour, baking powder, baking soda and salt until well-blended.
- In small bowl, whisk together milk, lemon juice and 2 teaspoons lemon peel. (Milk will curdle and thicken slightly.)
- In another medium bowl, lightly beat egg; whisk in 6 tablespoons melted butter and milk mixture.
- Make well in center of flour mixture; pour in egg mixture.
- Stir just until blended. Divide evenly among muffin cups.
- Bake 20 to 25 minutes or until browned and toothpick inserted in center comes out clean.
- Cool on wire rack 10 minutes. Remove from pan.
- In another small bowl, stir together 1/2 cup sugar and 1 teaspoon lemon peel.
- Dip tops of muffins in 1/4 cup melted butter; dip in sugar mixture.
- Serve warm or at room temperature.
