APPLE TART IN PHYLLO
Steps:
- Heat oven to 400 degrees.
- Combine apples, dried fruits, pecans, cinnamon, lemon juice, sugar, lemon rind, candied ginger and flour in a bowl and mix well.
- Unwrap phyllo and cover with wax paper and damp towel. Keep covered when not in use to prevent drying out.
- Heat butter and add oil.
- Using some of the butter mixture, lightly grease a baking pan, about 12 inches by 18 inches. (The pan can be as large as the sheets of phyllo, and brands differ in size. If they are too large for the pan, trim them.)
- Arrange 1 sheet of phyllo on bottom of pan and brush lightly with butter mixture. Repeat, buttering between sheets, using 8 sheets in all.
- Spread apple filling evenly over phyllo and top with another sheet, brushing lightly with butter. Repeat, butter each sheet, using 8 sheets in all, brushing the top sheet with butter. Cut phyllo all the way through into 12 rectangles.
- Bake in lower third of the oven for 25 minutes; reduce heat to 350 degrees and continue baking 25 minutes longer, until top is brown. Cool. Serve at room temperature.

- Preheat the oven to 425 degrees F.
- Place the puffed pastry rectangles onto a baking pan that's been sprayed with nonstick spray or lined with parchment paper. Add the sugar, salt and lemon juice to the apples. Stir to combine. Allow to sit for a few minutes.
- Arrange the apple slices on the pastry rectangles in a straight line, overlapping as you go. Bake until the pastry is puffed and golden brown, about 20 minutes.
- Remove from the pan immediately and place on a serving platter. Serve with caramel sauce and chopped pecans.
APPLE TARTS
Steps:
- Preheat the oven to 400 degrees. Line 2 sheet pans with parchment paper.
- Cut each sheet of puff pastry into 4 squares. Divide the pastry between the prepared sheet pans and refrigerate while you prepare the apples.
- Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across the pastry and place one slice of apple on each side of the arranged slices. Sprinkle the apples evenly with the sugar and dot them with the butter.
- Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Don't worry! The apple juices will burn in the pan but the tarts will be fine! When the tarts are done, heat the apricot jelly together with the Calvados until bubbly and brush the apples and pastry completely with the jelly mixture. Loosen the tarts with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.
FIG AND APPLE PHYLLO TART

- Remove any stems from figs. In a saucepan combine figs with remaining filling ingredients and simmer, covered, 20 minutes, or until very tender. Transfer mixture to a food processor and blend until smooth.
- Brush a 9-inch-square or 10-inch round tart pan with a removable fluted rim with some butter. On a work surface arrange 1 sheet phyllo with a short side facing you and brush with some butter, On it layer 3 more sheets phyllo and more butter in same manner and line pan, pressing phyllo into pan with fingertips and leaving short sides overhanging.
- Repeat layering procedure with remaining phyllo and some of remaining butter and arrange in pan at a 90-degree angle to the first lining, easing to fit. Put pan on a baking sheet and roll overhanging edges under loosely (outside the pan) to form a decorative edge. Brush edge with remaining butter and spread fig mixture evenly on bottom.
- Preheat oven to 350°F.
- Peel, quarter, and core apples and cut each quarter in 3 or 4 wedges. Arrange apple wedges over fig mixture in decorative pattern and sprinkle with granulated sugar. Bake tart in middle of oven 40 minutes.
- In a small bowl stir together yogurt and egg.
- Remove tart from oven and increase oven temperature to 475°F. Pour yogurt mixture over apples and cover edge of tart with foil. Return tart to oven and bake 15 minutes, or until apples begin to brown. Cool tart in pan on a rack 30 minutes and sprinkle with almonds and confectioners' sugar.

Steps:
- Peel, core and dice apples.
- Place them in a saucepan with sugar and lemon zest.
- Drizzle the lemon juice over.
- Bring to a boil, stirring well and then cook for 5 minutes or until apples are soft.
- Stir in the golden raisins and cinnamon.
- Pour mixture into a 5 cup pie dish.
- Level top with a spoon and let cool.
- Preheat oven to 350F.
- Place a pie funnel in the center of the fruit.
- (alternately, insert several pieces of macaroni or penne pasta.) The function of this is to let the steam that builds up under your crust vent.
- Brush each sheet of phyllo with melted butter then scrunch up loosely and place over fruit to cover.
- Bake 20-30 minutes until crust is golden.
- Dust with powdered sugar and serve with custard or ice cream if desired.

- Preheat oven to 400 degrees with a rack in top position. Combine pecans, breadcrumbs, sugar, and cinnamon.
- Line a baking sheet with parchment, and top with 1 phyllo sheet. Brush phyllo all over with butter, and sprinkle pecan mixture evenly over top. Repeat 4 times. Top with remaining phyllo sheet, and brush with all but 2 tablespoons butter.
- Slice pears and apples 1/8 inch thick; discard seeds. Arrange pear and apple slices in a single layer on phyllo, leaving space between fruit and a 1/4-inch border around edges. Brush fruit with reserved 2 tablespoons butter. Sprinkle with sugar, and dust with cinnamon. Bake, rotating sheet halfway through, until phyllo is golden brown and fruit is soft, 28 to 32 minutes. Let cool slightly. Cut into 8 pieces.

- Preheat the oven to 350 degrees. On a work surface,stack the phyllo sheets and cut out four 7-inch squares (12 total), discarding the scraps. Stack the squares between 2 sheets of wax paper and cover with a kitchen towel.
- Spray the countertop and 4 individual ring molds with nonstick cooking spray. Lay a square of phyllo on the counter and sprinkle with some of the 2 teaspoons of sugar; lay a second square on top, brush with the melted butter, and sprinkle with sugar. Cover with a third layer and sprinkle with sugar.
- Work the phyllo into the ring mold as you would a handkerchief into a pocket, letting the edges overhang. Repeat with the remaining phyllo. Place the molds on a parchment-lined baking sheet and bake for 10 to 12 minutes, or until golden brown. Carefully transfer the phyllo shells to a rack.
- Combine the apples, lemon juice, and apple juice and set aside. In a nonstick skillet, melt the butter over medium heat. Add 1 tablespoon sugar and caramelize for 3 minutes, or until golden brown. Remove from the heat, add the Cognac, and stir with a wooden spoon. Return the pan to the heat, add the spices and apple mixture, and cook, stirring occasionally, until the apples are tender, about 5 minutes.
- Divide the apples among the shells and sprinkle with crystallized ginger.

- Preheat oven to 325°F. Brush pie pan with about 1 Tbsp. butter.
- Whisk granulated sugar, brown sugar, and cinnamon in a medium bowl.
- Place 2 phyllo sheets on a work surface with the long side facing you; keep remaining phyllo covered with plastic wrap. Using pastry brush, lightly brush entire surface with butter, then sprinkle 1 Tbsp. cinnamon sugar on right half of phyllo. Fold left half of both sheets over to enclose sugar. Brush surface lightly with butter. Press folded phyllo, buttered side down, into center and edges of prepared pan, leaving an equal overhang on two opposite sides. - Pour lemon juice into a large bowl. Very thinly slice apples crosswise into rounds with mandoline (about 1 mm thick), transferring to lemon juice and tossing gently to coat as you go.
- Layer apple slices in phyllo-lined pan, overlapping in concentric circles to form a single even layer. Sprinkle with 1 Tbsp. cinnamon sugar. Repeat with remaining apple slices, sprinkling with 1 Tbsp. cinnamon sugar between each layer and pressing firmly with clean hands to compact. Repeat until pan is full, then sprinkle top with 2 Tbsp. cinnamon sugar (you may have leftover cinnamon sugar depending on the size of your apples; save for another use).
- Place pie pan on a rimmed baking sheet and tent with 2 pieces of overlapping foil, making sure phyllo crust is fully covered. Bake pie 2 hours. Remove foil and continue to bake until crust is golden brown, 15-20 more minutes. Transfer to a wire rack. Using a clean pastry brush, brush juices from the edges of filling over top to create a shiny glaze. Let cool completely (apples will collapse and set as pie cools; this is okay) before serving.

- Prepare the filling: Melt 4 Tbsp. butter in a frying pan over medium heat. Cut your peeled apples in to quarters, remove the core, then slice into 1/2-inch slices. Add apple slices to your pan and cook, stirring, until apples are tender. Sprinkle with cinnamon and a pinch of salt. Add brown sugar and cream. Stir to combine. Allow mixture to cook, bubbling, until sauce reduces and thickens slightly. Remove from heat and allow to cool to room temperature (or make ahead and refrigerate until ready to assemble).
- To make tart: Preheat oven to 350° F. Melt butter and have a pastry brush ready. Have a damp, clean tea towel handy. Brush your pie plate with a bit of melted butter. Remove thawed phyllo from fridge. Take one full sheet and brush lightly with melted butter. Keep the remaining phyllo covered with damp towel while you aren't working with it. Drape the phyllo sheet over the pie plate. Don't try to press it down at this point, as it may tear. Butter another sheet of phyllo and lay it over the bottom sheet at an angle to the first one. Repeat with a third sheet of phyllo, buttering and then laying it over the pie plate at an angle to the first two. At this point, you should have covered all of the pie plate. If not, add another layer.
- Gently press down in the centre of the pie plate to make a cavity. Using kitchen scissors, trim the excess phyllo to within 1 inch of the edge of the pie plate. Reserve scraps. Add your cooled or refrigerated apple filling to the pie plate. Fold the edges of the phyllo in towards the filling to make a neat edge. Brush with melted butter. Take the reserved phyllo scraps and one piece at a time, scrunch them up and place on top of the filling until the top is covered (you may need to use an additional sheet of buttered phyllo to cover it all). Dap lightly over the scrunched up phyllo with butter. Place pie plate on to a baking sheet and bake in the pre-heated oven for about 30 minutes. Be sure to watch closely near the end to ensure the phyllo doesn't burn. It should be a lovely over-all golden colour. As the filling is already cooked, you don't need to worry about the apples being cooked. Just be sure the phyllo is cooked and golden.
- Transfer pie plate to a cooling rack and allow to cool for 10-15 minutes before eating. Lovely served with vanilla ice cream.
