APPLE CRISP FRENCH TOAST CASSEROLE

Steps:
- For the French toast and caramelized apples: Preheat the oven to 275 degrees F.
- Spread the bread cubes on a large baking sheet and bake until lightly toasted, about 15 minutes. Let cool. Adjust the oven to 350 degrees F.
- Combine the sugar, apple cider and lemon juice in a large, high-sided saute pan and bring to a simmer over medium heat. Stir in the Gala and Granny Smith apples and cook, stirring occasionally, until softened and caramelized, about 15 minutes. Add the apple brandy if using; cook a few minutes longer. Using a slotted spoon, transfer the apples to a bowl (you don't want the apples to be too wet) and let cool. Reserve the apple cooking liquid for serving.
- For the streusel: Mix together the butter, salt and sugar in a large bowl until smooth. Add the flour, oats and cinnamon and mix until well combined. Refrigerate for 15 minutes. Squeeze the mixture in your hands to form larger and smaller clumps.
- For the casserole: Butter a 9-by-13-inch baking dish with some softened butter. Whisk the eggs, yolks, vanilla and cinnamon in a large bowl until smooth. Whisk in the half-and-half, then fold in the cooled apples. Add the bread and stir to coat, pressing down to make sure bread is totally submerged. Let sit for 10 minutes.
- Transfer the apple-bread mixture to the buttered baking dish, pressing down to make sure the top is an even layer. Scatter the streusel evenly over the top. Cover with foil and bake for 30 minutes. Uncover and continue baking until puffed and lightly golden brown, another 30 minutes or so. Remove from the oven and let cool slightly.
- Reheat the reserved apple cooking liquid. (If very thin, simmer briefly over medium heat until reduced to a syrup; if there isn't much, add some apple cider and simmer briefly.) Turn the heat to low and whisk in the cold butter, piece by piece, until emulsified. Serve with the French toast.
SUMMER SQUASH CASSEROLE
Yellow squash is easily overlooked (cauliflower gets all the attention), but with the addition of cheese and a buttery cracker topping, you can transform it into a summer casserole perfect for a barbecue or potluck.

- Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
- Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
- Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
- Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
- Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of water to a boil. Add squash and cook until tender but still firm, about 15 minutes; drain.
- To the squash add milk, butter, eggs, green onion tops, salt, pepper and sugar; mix well. Transfer to a 9x13 inch casserole dish. Sprinkle with cheese and crushed crackers.

Steps:
- Melt the butter in a large skillet and add apples.
- Cook and stir for 5 minutes.
- Add brown sugar, water, and cinnamon and continue to cook and stir for 10 minutes until apples are tender.
- Spoon mixture into 13x9 baking dish.
- Cover apples with bread slices, making sure to cover the entire surface.
- Trim the bread to fit if you must.
- Beat eggs until foamy, then beat in milk and vanilla.
- Pour egg mixture over the bread slices.
- Cover the dish with plastic wrap and refrigerate overnight.
- In the morning, remove the dish from the refrigerator and let it stand while oven is preheated to 375 F.
- Bake uncovered for 35 minutes, or until bread is golden and firm.
- Let sit 10 minutes before serving.
- To serve on a platter, run a knife around the edges of the casserole, place platter on top of casserole, and carefully flip.
- To serve individually, use a spatula to remove serving, place serving plate on top of serving and carefully flip so apple side is up.

- Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. - Grease the bottom and sides of a 9x13-inch baking dish or a 9-inch springform pan.
- Beat 2 1/4 cup flour, milk, 1/4 cup sugar, yeast, 6 tablespoons butter, vanilla extract, and 1 pinch salt in a large bowl with an electric mixer on high until dough is smooth, about 5 minutes; spread into baking dish and press dough up the sides. Press apple slices into dough.

- Preheat oven to 350 degrees.
- Beat the butter or margarine with a wooden spoon or mixer until creamy. Slowly add the sugar, together with the vanilla sugar, salt and almond extract, alternating with the eggs. Mix the dough until it is very foamy and the sugar has been thoroughly dissolved. Sift in the flour with the baking powder, add the ground almonds, and mix everything together quickly.
- Carefully coat a springform with butter or margarine. Pour the batter in and smooth down the surface. Peel the apples, cut in half lengthwise, and remove the cores. Cut into the outer surface a few times with a knife, but don't cut all the way through. Brush apples with the lemon juice. Place the apples close together onto the batter, core side down. Soak the currants for a short time in hot water, wash thoroughly and rub dry in a cloth. Sprinkle the currants, together with the slivered almonds over the apples. Bake the cake at 350 degrees for 75-80 minutes or until golden brown. Remove from the oven and let cool before dusting with icing sugar.
- Serve with whipped cream.
- Note: I always leave out the optional items as I find they don't they add much to the flavour of the cake.
APPLE-QUARK-CASSEROLE
This is a fluffly winter dessert, which makes yummy apples the star of the show. Of course, you could make this anytime of the year, if you like a nice warm dessert. It goes great with vanilla ice-cream, custard or whipped cream I hope youll enjoy it! :)

- Using your mixer beat egg whites and salt until nearly stiff. Add 2 tbs of the sugar and beat until stiff peaks have formed.
- In another bowl beat egg yolks, 3 tbs of the sugar and the vanilla sugar until creamy. Mix in quark and semolina. Then fold in egg whites and raisins carefully.
- Pour into 4 well greased ramekins of 10 cm (4 inches) in diameter. Stick the apple slices into the dough until nearly covered. Sprinkle with remaining sugar.
- Bake in the pre-heated oven at 180°C/350°F 30-35 minutes until toothpick inserted in centre comes out clean.
- Enjoy with topping of your choice. :).

- Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
- To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
- Lower the oven temperature to 400 degrees.
- To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.

QUICK APPLE STREUSEL COFFEE CAKE

- Sift flour and measure then sift together with the other dry ingredients. Beat the egg, then add the milk and melted shortening. Pour the wet into the dry then add the raw apples and mix well. Pour into a well greased 8-inch square pan. Mix together the streusel ingredients and sprinkle over the top of the batter. Bake at 400 about 25 to 30 minutes or until a toothpick inserted comes out clean. Serve the coffee cake with vanilla ice cream.

APPLE CHEESE CASSEROLE
From Martha Nesbit's book, Savannah Celebrations. She says, "This recipe is not only perfect for brunch, but is also delicious with any menu featuring pork." In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!
