APPLE-RASPBERRY PIE

This familiar fruit-filled dessert is a close cousin to classic apple pie. We started with a standard all-butter piecrust and our favorite cooking apples, then added raspberries to the mix. You should be able to find fresh berries in your local market; if not, frozen ones will do.

Steps:

  • Preheat oven to 375 degrees. Stir apples, raspberries, granulated sugar, flour, lemon juice, and salt in a large bowl; set aside.
  • On a lightly floured surface, roll out 1 disk of dough to 1/8 inch thick. Cut into a 12-inch round. Fit into a 9-inch pie plate. Fill with apple mixture. Dot with butter.
  • On a lightly floured surface, roll out remaining disk of dough to 1/8 inch thick. Cut into a 12-inch round. Drape over filling. Trim overhang to 1 inch. Press edges to seal. Fold overhang under, and crimp as desired. Make five 3-inch slits in top crust. Refrigerate 20 minutes.
  • Whisk egg yolk and cream in a bowl; brush over top crust. Sprinkle with sanding sugar. Bake until crust is golden and juices are bubbling, 1 hour 10 minutes to 1 hour 20 minutes. Place foil on rack below to catch juices. Tent pie with foil if browning too quickly. Transfer to a wire rack; let cool 4 hours (up to overnight).

2 3/4 pounds assorted baking apples, (such as Rome or Cortland), peeled, cored, and cut into 1/2-inch-thick slices
6 ounces fresh or partially thawed frozen raspberries
3/4 cup granulated sugar
1/4 cup all-purpose flour, plus more for work surface
1 tablespoon fresh lemon juice
Pinch of salt
Lucinda Scala Quinn's Pate Brisee
2 tablespoons unsalted butter, cut into pieces
1 large egg yolk
1 tablespoon heavy cream
Fine sanding sugar, for sprinkling

APPLE-RASPBERRY CRUMB BARS

Craving both cookies and pie? A classic crumb bar is just what you need! It's got a tender, sweet, cookie base; real fruit filling; and toothsome, oaty crumbs on top. It's more portable than pie and more satisfying than a cookie. What to do when your favorite fruit is out of season? Make your way to your supermarket's frozen fruit aisle. Since frozen fruit has been picked at peak ripeness, it's reliably sweet and delicious and often a better value than fresh.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch square baking pan and line it with parchment paper, leaving a 2-inch overhang on two sides. In a large bowl, whisk together the flour, baking powder and salt. In a medium bowl, beat the butter and the brown sugar with an electric mixture on medium speed until fluffy, about 2 minutes. Beat in the egg. Spread about two-thirds of the batter evenly over the bottom of the prepared pan with an offset spatula. Bake the bottom crust until it is golden brown, 24 to 26 minutes. Mix the remaining batter with the oats and set aside.
  • Meanwhile, in a medium saucepan, combine the apples, raspberries and sugar and cook over medium heat, stirring occasionally, until the mixture is bubbling and the fruit has broken down, 5 to 6 minutes. In a small bowl, mix about 3 tablespoons of the fruit mixture with the cornstarch until smooth. Add the cornstarch mixture to the fruit and simmer for another 2 to 3 minutes. Remove the jam from the heat and let cool slightly.
  • Top the bottom crust with the fruit and spread it out evenly. Top the fruit with the oat crumb mixture, squeezing it to make some larger clumps. Bake until the top is golden brown, 28 to 32 minutes. Transfer the pan to a rack to cool completely. Using the parchment, lift out the entire bar mixture and place it on a cutting board. Cut into squares.

4 small apples, peeled, cored and chopped (about 2 1/2 cups)
2 cups frozen raspberries
1/2 cup granulated sugar
2 teaspoons cornstarch
1 cup (2 sticks) unsalted butter, at room temperature, plus more for the pan
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 cup packed light-brown or dark-brown sugar
1 large egg
1/2 cup old-fashioned rolled oats

APPLE KUCHEN

These bars should be made by patient bakers with a bit of time - they look best when the apples are lined up in neat columns. This is not to say that it makes any difference in the way they taste.

Steps:

  • For the cake:
  • Pour 2 1/4 cups of the flour in a bowl with the salt, sugar and yeast. In another bowl, beat the eggs and add them, with the vanilla extract, lemon zest and cinnamon, to the lukewarm milk. Stir the liquid ingredients into the dry ingredients to make a medium-soft dough, being prepared to add more flour as necessary. I generally use about 2 1/3 cups in all, but advise you to start off with the smaller amount: just add more as needed. Work in the soft butter and knead by hand for about 10 minutes or half that time by machine. When the dough is ready it will appear smooth and springy: it suddenly seems to plump up into glossy life.
  • Cover with a kitchen towel and leave until doubled in size (1 hour to 1 hour 15 minutes). Or leave to rise slowly in a cold place overnight. Then punch down and press to line a jellyroll pan measuring 13 by 9-inches. You may think it's never going to stretch to fit, but it will, although you may need to let it rest for 10 minutes or so mid-stretch, especially if the dough has had a cold rise. When it's pressed out on the pan, leave it to rest for 15 to 20 minutes and then brush with the egg and cream mixture.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Peel and chop the apple and toss it in a bowl with the blackberries and the zest from the other half lemon. Set the bowl aside for the few minutes it takes to make the crumble topping. Put the flour, ground almonds and cinnamon in a medium-sized bowl, stir to combine, then add the cold, diced butter. Using the tips of your fingers - index and middle stroking the fleshly pads of your clumpy (this is very buttery mixture) oatmeal. Fork in the sugars and sliced almonds.
  • Tumble the fruit over the egg-washed dough and then sprinkle the crumble on top of that. Put in the oven for 15 minutes, then turn down to 350 degrees F and cook for a further 20 minutes or so, until the dough is swelling and golden at its billowing edges and the crumble is set; don't expect it to be crunchy.
  • Remove from the oven and, if you can, wait 5 minutes or so before cutting it into greed-satisfying slabs.

2 1/4 to 2 1/3 cups white bread flour
1/2 teaspoon salt
2 tablespoons sugar
1/2 package (from 1/4-ounce package) rapid-rise yeast (about 1 teaspoon)
2 eggs
1/2 teaspoon vanilla extract
1/2 lemon, zest grated
1/4 teaspoon ground cinnamon
1/2 cup lukewarm milk
Scant 1/4 cup butter, softened
1 egg beaten with 1 tablespoon cream and a pinch ground cinnamon
1 small or 1/2 medium firm, tart apple (about 6-ounce in weight)
1 2/3 cups blackberries
1/2 lemon, zested
1/3 cup self-rising flour
2 tablespoons ground almonds
1/4 teaspoon ground cinnamon
Scant 1/4 cup cold unsalted butter, diced

2 tablespoons Demerara, or granulated brown sugar

APPLE-RASPBERRY PANDOWDY

Entry-level bakers, this one's for you. Essentially a batter-topped cobbler, it's assembled in one pan: Toss tart apples with lime juice and cinnamon, then cover them with a drop-biscuit batter and a sprinkle of fresh raspberries. Finish with a fine veneer of sugar drizzled with hot water, so it melts into a delicate shell; then pop it in the oven until the top is crisp and golden brown, and present it with pride-a foolproof, down-home finale for your feast.

Steps:

  • Preheat oven to 350°F. In a 2 1/2-quart baking dish or cake pan, toss apples with lime zest and juice and cinnamon; spread in an even layer. Transfer dish to a parchment-lined rimmed baking sheet (to catch any juices that bubble over).
  • Beat butter with 1 cup sugar, baking powder, salt, and vanilla on medium speed to combine, about 1 minute (mixture will be grainy). Add both flours and beat until no dry flour remains and mixture is crumbly. With motor running, slowly add milk, beating until light and fluffy, 2 to 3 minutes.
  • Spoon batter over apples, then spread to edges in an even layer. Scatter raspberries over batter. Sprinkle remaining 1/3 cup sugar evenly over top. Drizzle hot water over sugar (most will melt).
  • Bake until top is crisp and golden brown and cake is set, 55 to 65 minutes. Let cool slightly, about 15 minutes. Serve warm, topped with ice cream or a drizzle of heavy cream.

2 1/2 pounds tart apples, such as Granny Smith, cored, peeled, and cut into 1-inch-thick wedges
1 teaspoon finely grated lime zest, plus 3 tablespoons fresh juice
1 teaspoon ground cinnamon
6 tablespoons unsalted butter, softened
1 1/3 cups sugar, divided
1 1/4 teaspoons baking powder
1 teaspoon kosher salt (we use Diamond Crystal)
1 teaspoon pure vanilla paste or extract
1 cup unbleached all-purpose flour
1/4 cup rye flour
2/3 cup whole milk
1 1/2 cups raspberries (about 6 ounces)
1/3 cup hot water
Vanilla ice cream or heavy cream (optional), for serving

Steps:

  • Make the shell:
  • In a small saucepan cook the butter over moderate heat until it is golden brown, being careful not to let it burn, let it cool, and chill it just until it is no longer liquid. (The butter may be browned 1 day in advance and kept covered and chilled. Let the butter soften at room temperature before using.) In a bowl cream together the browned butter, the granulated sugar, and the brown sugar and beat in the egg, the vanilla, and the almond extract. Into the bowl sift the flour, the baking powder, and the salt and beast the dough until it is just combined. Chill the dough for 30 minutes and press it onto the bottom and side of a 9-inch tart pan with a removable fluted rim.
  • Make the filling:
  • In a saucepan of boiling water blanch the peaches for 1 minute, drain them, and refresh them under cold water. Peel the peaches, halve them, and cut 3 of the halves into 1/8-inch-thick slices, reserving the remaining half for another use. Arrange the slices decoratively, overlapping them slightly, in the shell, sprinkle them with the sugar, and bake the kuchen in the lower third of a preheated 375°F. for 20 minutes. Arrange the raspberries decoratively over the peaches and bake the kuchen for 10 minutes more. Transfer the kuchen to a rack, brush the fruit with the jelly, and let the kuchen cool for 15 minutes. Remove the rim of the pan and serve the kuchen warm or at room temperature.

For the shell
1 stick (1/2 cup) unsalted butter
1/3 cup granulated sugar
2 tablespoons light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 cups all-purpose flour
1 teaspoon double-acting baking powder
3/4 teaspoon salt
For the filling
2 firm-ripe peaches
2 tablespoons sugar
1/2 pint raspberries
1/4 cup currant jelly, melted and cooled

Steps:

  • Position the oven racks so that they are evenly spaced, with one rack in the center of the oven. Preheat the oven to convection bake at 400°F. Butter a 12-inch tart pan or a 9 × 13-inch cake pan.
  • Cream the softened butter and 3/4 cup of the granualted sugar until light in a large bowl, using an electric mixer; add the eggs and vanilla and beat until light and fluffy. Add the flour, baking powder, and salt to make a smooth dough.
  • Spread the dough into the prepared pan.
  • With a sharp knife, make lengthwise cuts in the apples, 1/4 inch apart but not all the way through, so the halves still hold together. Press the apple wedges, cut side down, evenly into the batter. Brush the apples with the melted butter and sprinkle with the remaining 2 tablespoons granulated sugar.
  • Bake on the center rack for 25 minutes, until the cake is golden and the apples are cooked through. Remove from the oven and cool on a wire rack. Sprinkle with powdered sugar.

12 tablespoons (1 1/2 sticks) butter, softened
3/4 cup granulated sugar, plus 2 tablespoons
3 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
5 small apples, such as McIntosh, Cortland, Granny Smith, or Golden Delicious, peeled, cored, and cut into 8 wedges
2 tablespoons butter, melted
Powdered sugar
