BAKED APPLES WITH APRICOTS AND CASHEWS
Created for RSC #6. We love baked apples in our family, and are always on the lookout for interesting fillings.

Steps:
- Preheat the oven to 375 degrees F
- Partially peel 8 apples, leaving the bottom half intact
- Remove the core (I use a melon baller)
- Cut a thin slice off the bottom of the apple if necessary to make it stand upright
- Place the apples in a baking dish
- Peel the 9th apple, cut it into 1/2 inch dice
- Combine the apple dice with the applesauce, raisins, apricots, cashews, 1/3 cup sugar, lemon juice and 1/4 teaspoon cinnamon
- Toss to combine
- Combine the remaining sugar and cinnamon in a small bowl
- Fill the apples with the stuffing
- Place 1/2 teaspoon of butter on top of each apple
- Sprinkle each apple with some of the cinnamon/sugar mixture
- Add white wine to the baking dish to the depth of 1/2 inch
- Bake for 1 hour or until tender, basting the apples occasionally with the pan juices
- Add water (or more wine) if neccesary
- Serve warm or at room temperature

Steps:
- Preheat oven to 350F and spray an ovenproof dish with cooking spray.
- Core apples.
- With point of the knife, make a cut in the skin about 1/3 of the way down the apple, cutting through the skin about 1/8" deep.
- This prevents the apple from exploding during baking.
- Arrange apples in prepared dish.
- Spoon preserves into the core and dot with butter.
- Drizzle with maple syrup and lemon juice.
- Sprinkle with lemon rind.
- Bake for 30 minutes, baste with pan juices, and bake for an additional 30 minutes (or until apples reach desired doneness).
- Serve immediately.

BAKED APPLES WITH APRICOT AND WALNUT FILLING

- In a small bowl combine well the apricots, the walnuts, the brown sugar, and the butter. Core the apples, making each opening large enough to hold half the apricot mixture, peel the top third of each apple, and fill the cavities with the apricot mixture. Arrange the apples in a deep 2 1/2-quart microwave-safe baking dish so that they do not touch one another or the sides of the dish, pour the orange juice around them, and microwave the apples, covered with microwave-safe plastic wrap, on high power (100%) for 7 minutes. Pierce the plastic wrap with the tip of a sharp knife and let the apples stand, covered, for 5 minutes, or until they are tender.

Steps:
- Preheat oven to 350 degrees. Mix 1/4 cup sugar and 1/3 cup water in an 8-inch square baking dish. Peel tops of apples; core with melon baller (leave the bottom intact).
- In a bowl, toss dried apricots with remaining 1/4 cup sugar, ground ginger, and cinnamon.
- Fill apples; place in dish. Dot each with 1/4 tablespoon butter. Bake, basting occasionally, until tender, 40 to 50 minutes. Drizzle with pan syrup.

MY HONEY'S APPLE AND APRICOT PIE
This recipe makes two wonderfully delicious pies which is great for OAMC. If you want less crumble topping, just double the pie ingredients, and you can make 4 lucious pies. You can freeze them just before baking to enjoy another time, (Just be sure to increase the cook time to 50-55 min for a frozen pie). The crumbled topping stores well in the freezer so you could even make one pie at a time if that is your choosing. We adapted this from Chef #422893's wonderful Recipe #255771 making it lighter (reducing down the calories, fat, and carbs) and revised it into a pie form. We have made this using Sunmaid dried fruit bits in place of the apricots (which requires no re-hydration). Enjoy. :)

- FILLING: Place apricots in a heat resistant bowl and pour enough boiling water over them to cover. Allow to soak for 5 mins or until soft. Drain. Combine all filling ingredients in a large bowl.
- CRUMBLE TOPPING: In a separate bowl, place dry cake mix, oats, and almonds. Pour melted butter over top and stir, tossing to separate and crumble.
- ASSEMBLY: Preheat oven to 425°F Spoon filling into pie crust. Drizzle with honey. Spoon crumble mixture over fruit filling and bake for approximately 25-30 minutes.
BAKED APPLES WITH DATES AND APRICOTS
Laura Frankel, chef-owner of Shallots in Skokie, includes this baked apple recipe in her new cookbook, "Jewish Cooking for All Seasons." She thinks baked apples are the perfect, lighter ending to most holiday meals. The apples can be baked 4 hours ahead and kept loosely covered at room temperature. Pomegranate molasses (also known as pomegranate paste) can be found in many Middle Eastern markets, or you can make your own using Recipe # 86849.

Steps:
- Heat the oven to 325 degrees.
- Pulse the dates and apricots in a food processor until chopped and clumping together, about 10-12 times or chop by hand (dip your knife in hot water to make it easier).
- Transfer the fruit to a bowl; stir in the honey, pomegranate molasses, 1/4 cup of the wine, cinnamon, cloves and nutmeg.
- Stuff the mixture into the cored apples, mounding at the top. Place the apples in a baking dish. Pour the remaining 1/2 cup of the wine around the apples. Bake until the apples are soft, basting often with the wine and juices, about 45 minutes.
- Serve warm or at room temperature; spoon some of the cooking juices around the apples.
