This is a great way to eat cornbread. It's always been my favorite; even with green, chilli or just by themselves. You'll love them.

- 1. After adding all dry ingredients to bowl...
- 2. Add egg, oil and milk.
- 3. mix well. batter should be thick
- 4. heat frying pan with oil 2 teaspoon of oil
- 5. Add 2 large spoonfull of batter in pan
- 6. bubbles will form on top when ready to flip over
- 7. check bottom, should be golden brown
- 8. flip Carfully
- 9. cook till golden on opposite side repeat till all Flap-Jacks are cooked ENJOY!

Steps:
- Heat oven to 200° F. Coat a baking sheet with cooking spray.
- In large bowl, combine cornmeal, flour, baking soda and salt.
- In medium bowl, combine buttermilk, oil, maple syrup and egg. Add to flour mixture; stir just until blended.
- Coat a large skillet with cooking spray and warm over medium heat. Pour batter by scant 1/4 cupfuls into skillet. Cook 2 minutes or until tiny bubbles appear on the surface and edges begin to look dry. Flip and cook 2 minutes longer or until golden. Place flapjacks on the prepared baking sheet; place in oven to keep warm.
- Recoat skillet with cooking spray. Repeat with remaining batter to make a total of 18 flapjacks. Serve flapjacks with berries.

This was my grandmother's recipe from my paternal side. She used these at breakfast with lots of butter and additional molasses or honey. Leftovers were served with collards or turnip greens for lunch or dinner.

Steps:
- Combine the first 5 ingredients in a large bowl; stir well.
- Add the egg, buttermilk, oil, and molasses, stirring until blended.
- Preheat the griddle to 350 degrees; lightly grease the griddle. For each flapjack, pour about 1/4 cup batter onto the hot griddle. Cook the flapjacks until the tops are covered with bubbles and the edges look cooked; turn and cook the other side.
