Steps:
- Preheat the oven to 400°F.
- Place the chicken on a rimmed cookie sheet or baking dish lined with foil or parchment paper, sprinkle with salt and pepper, and bake for 10 minutes.
- While the chicken is baking, whisk together the jam, mustard, water, thyme, and a little salt and pepper in a small saucepan over low heat for about 3 minutes. It should be slightly syrupy.
- Pull the chicken out of the oven and pour the sauce on top. Continue baking for another 15 minutes. For the last 3 minutes, place the chicken under the broiler on the top rack so it gets golden and crispy looking.

- Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. - Place chicken in single layer in shallow pan. Bake 20 min., turning after 10 min. Meanwhile, mix jam, dressing and mustard until well blended. Reserve 1 Tbsp. jam mixture for mixing with the cooked quinoa.
- Brush chicken with remaining jam mixture; bake 20 min. or until done (165ºF). Meanwhile, heat oil in large skillet on medium-high heat. Add vegetables; cook 3 to 5 min. or until crisp-tender. With all the variants of apricot chicken that appear on Recipezaar, this one doesn't seem to have been posted yet ... I got this from "Your Family Will Love It!", put out by Prevention magazine some time in the mid-1990s. It's my go-to recipe when my oven isn't free (and we don't have access to a grill). Couldn't be easier, and I always have the ingredients in the house. One 4-ounce portion is 4 WW points.

- In a large no-stick skillet, combine the water, mustard, preserves, soy sauce, and scallions. Mix thoroughly.
- Add chicken. Bring to a simmer over medium-high heat, then reduce heat to medium or medium-low. Gently simmer for 15-18 minutes, or until chicken is cooked through.

APRICOT CHICKEN
A favourite in our home....tastes even better reheated the next day. Serve with either plenty of boiled rice or mash potato. Can be made gluten free by using gluten free flour liquid stock and dry soup mix. In Australia Massell stock is gluten free as is Basco GF dry french onion soup mix.Options- top with some ground pepper or stir through some parsley or cilantro (coriander) before serving. For anyone who is gluten-free you can use "Recipe#244204" to make your soup replacement to use in this chicken dish

- Cut chicken into large chunks and roll in cornflour (I do this is a large plastic bag to cut down on the mess).
- Heat oil in a large frypan and lightly brown the chicken pieces.
- Add the soup mix,the apricot nectar and stock and stir well. Cover and simmer gently for about 10 minutes, or until the chicken has cooked through. The smaller the chicken pieces, the quicker they cook.
- Stir in the apricot halves and carrots. Reheat.
- ALTERNATE COOKING METHOD.
- Combine all of the ingredients (except the apricot halves) in a casserole dish and bake at 180°C for approx 75 minutes. Add the apricot halves and the carrots during the last 1/2 hour of cooking time. Add a little extra stock if the dish thickens too much.
CHICKEN WITH APRICOTS
Steps:
- Sprinkle the chicken on all sides with 1/2 teaspoon salt and very generous amounts of black pepper. Pat in and set aside.
- Put the apricots in a small pan with 1 cup water and bring to a boil. Lower heat and gently simmer for about 15 minutes or until apricots have softened but are firm enough to take another 5 minutes of cooking later. Leave in the cooking liquid.
- Pour the oil into a large frying pan or sauté pan and set over medium-high heat. When hot, scatter in the cinnamon sticks and cumin. Ten seconds later, put in half of the chicken pieces and brown them on both sides. Remove to a bowl. Put the remaining chicken pieces in the frying pan and brown them the same way, then remove to the bowl. Add the onions to the oil in the pan. Stir and fry them until they turn brown at the edges. Add the ginger and stir for a few seconds. Add the tomato paste and stir once. Now return the chicken and all accumulated juices to the pan, along with 1 1/2 cups water and 1 teaspoon salt. Cover and bring to a boil. Lower heat and cook gently for 15 minutes, turning the chicken once during this period. Remove cover and add the sugar, vinegar, apricots and their cooking liquid, garam masala, and cayenne. Stir gently and cook on high heat until the sauce is a bit syrupy, about 5 minutes.

SUBLIME ROASTED APRICOT CHICKEN
This is a great chicken to serve to company or whenever you need a really good but easy chicken dinner. I make this all the time and everyone loves it.

Steps:
- Layer a large roasting pan with onions. Place the chicken with your favorite stuffing or without on top of the onions.
- Sprinkle to cover the chicken with onion and garlic powders. Spoon the jelly over all the chicken. Pour the water over the chicken. Add the bay leaves to the water.
- Cover well and bake in a 425 oven for 1 hour. After 1 hour turn the chicken over so that both sides get nice and juicy and continue baking for another 1 1/2 hours.
- Remove foil or other tight cover and make sure the skin is topside up and allow to brown for another half hour. Serve with your favorite side dish and enjoy!
