AS-BIG-AS-A-PLATE COOKIES
I have been making these cookies since I was married 26 years ago. The original recipe came from Sunset magazine, I think, and these are my husband's favorites. Make sure to let them cool on the cookie sheet for at least 5 minutes after baking or they will fall apart.

Steps:
- Preheat oven to 350º.
- Mix flour, baking soda, and salt in a small bowl and set aside.
- In a large bowl, beat butter and brown sugar until creamy. Beat in eggs and vanilla. Gradually add flour mixture, beating until well blended. Stir in oats, chips, and nuts, if using.
- Spoon 1/2-cup portions of dough onto greased baking sheets, spacing cookies 6 inches apart and 2 1/2 inches from edges of sheets. Grease bottom of a pie pan (I use cooking spray), dip in granulated sugar, and use to flatten each cookie into 5 inch circle. If necessary, press cookies lightly with your fingers to give them an even thickness.
- Bake at 350º until edges are lightly browned, about 15 minutes. Let cool on baking sheets for about 5 minutes, then transfer to racks to cool completely.

THICK CUT-OUTS
A big batch of big thick sugar cookies. These are THE big soft sugar cookies you have been looking for. Frost them while warm and sprinkle with colored sugar.

- In a large bowl, cream together the sugar and butter until smooth. Beat in the eggs and egg yolks, one at a time, mixing well after each. Mix in vanilla extract. Combine flour, baking powder, and salt; stir into the sugar mixture. Cover dough and chill for at least 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. On a floured surface, roll the dough out to 1/2 inch thickness and cut into desired shapes using cookie cutters. Place 2 inches apart on the prepared baking sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack.
- To make frosting, mix together the confectioners' sugar, oil and 1 teaspoon vanilla until smooth. gradually add enough hot water to achieve a spreadable consistency. Spread over warm cookies.

- Preheat oven to 375 degrees F. and line a large baking sheet with a silpat liner or parchment paper.
- In stand mixer, cream your butter and sugars for a good 3 minutes. Will be light and creamy. Add eggs and vanilla, beating until well combined.
- In a large bowl stir together your flour, salt, baking soda and baking powder. Slowly add to your wet ingredients along with your chocolate chips until just combined. With a giant cookie scoop or a heaping 1/4 cup scoop dough onto your prepared baking sheet fitting only about 5 cookies per sheet. Press each cookie down to about 1/2 inch thick before baking. Bake for 13-16 minutes, until cookies are baked through and edges golden. Remove and let cool on baking sheet for 10 minutes before transferring. Place on cooling rack to finish cooling. Store any leftover cookies in an airtight container.
