Coarsely grate carrots into cabbage and mix well.In a small bowl, whisk together mayonnaise, sour cream, cider vinegar, sugar substitute, celery, and salt. Pour dressing over vegetables. Mix until thoroughly combined. Refrigerate at least 30 minutes before serving for flavors to blend.

A delicious, simple mayo-free cole slaw, from an classic guitarist! I like to add just under a teaspoon of finely minced or grated onion to this; but sometimes it's nice to have "as is". The amount of hot sauce can be adjusted, but I like it just like this.
