CREAMY AU GRATIN POTATOES

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

Creamy Au Gratin Potatoes image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
  • Bake 1 1/2 hours in the preheated oven.

  • Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
  • Slice the potatoes into sticks, and then cut the sticks to create a dice.
  • Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
  • Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot.   • Preheat the oven to 400 degrees F.
  • Add the cream and milk to a large saucepan over medium-low heat and bring to a gentle simmer. Add the nutmeg, a big pinch of salt and some pepper. Meanwhile, slice the potatoes on a mandoline to 1/8-inch thick. Place the potatoes in the warm cream mixture and simmer gently until the potatoes are two-thirds of the way cooked and the cream has thickened, about 15 minutes.
  • Place a 9-by-12-inch flameproof gratin dish on the stove over low heat. Brush the bottom and the sides with the melted butter. Spread the garlic around the bottom of the dish. Cook just long enough to toast the garlic in the butter, 3 to 4 minutes. Add a layer of the potato mixture. Combine the Gruyere and Parmesan in a bowl, then sprinkle a third of the cheese over the potatoes. Repeat the layering 2 more times, finishing with the remaining cheese. Pick the thyme leaves and sprinkle over the top, mixing with last layer of cheese.   • Spray a large, deep loaf pan with non-stick oil spray.
  • Layer frozen potatoes and cheese, making three layers, and ending with cheese.
  • Pour cream or half& half evenly over all.
  • Cover pan with foil and seal well.
  • Bake at 375 for 1 hour, removing foil for last 15 minutes.
  • I don't usually add salt before baking as most cheddars are fairly salty.
  • This can be varied by using different cheeses such as swiss, blue, smoked gouda, etc.
  • You can also use plain hash browns if you don't like the onion/green pepper taste.

  • Start by preheating your oven to 350 degrees Fahrenheit.
  • Llightly butter a 13x9 inch pan so the potatoes won't stick.
  • Cut your potatoes into very thin slices (width wise).
  • Organize half of the potatoes in the pan.
  • Sprinkle salt and pepper on potatoes to taste (I use about 3/4 teaspoon of pepper and 1/2 teaspoon salt).
  • Add a layer of cheese (1 cup ).
  • Peel 3 cloves of garlic (but leave them whole).
  • In a small sauté pan add 1 pint of heavy whipping cream, the 3 whole garlic cloves, and 1 teaspoon of chicken flavor bouillon (the bouillon is optional but I always add it.).
  • Evenly add the second layer of potatoes.
  • Add salt and pepper (same amount).
  • Add the rest of the cheese (1 cup).
  • Once the heavy whipping cream mixture comes to a boil REMOVE the 3 garlic cloves; pour mixture evenly over the potatoes.
  • Bake for approximately 1 hour and 20 minutes.

This is a very easy way to make creamy, cheesy potatoes. I used a wide baking dish. If using a taller narrower dish make 3 layers. You can vary the cheese. Last night I used a mixture of cheddar and mexican because I had a little of each left.

Steps:

  • Preheat oven to 375°.
  • Lightly butter a 2 quart baking dish.
  • Layer 1/2 potatoes and onions. Sprinkle 1 1/2 tablespoons flour over mixture. Dot with 1 1/2 tablespoons butter. Season with salt and pepper to taste. Spread 1/2 of the cheese over all. Repeat with another layer ending with cheese.
  • Pour warmed milk over all.
  • Bake at 375° for 40 to 60 minutes or until potatoes are tender and sauce is bubbly. If cheese browns too quickly cover with foil.

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 30-40 minutes or until tender. Drain and refrigerate several hours or overnight. , Peel potatoes and coarsely shred. Combine the salt, pepper and garlic salt. In a greased 13x9-in. baking dish, layer potatoes and salt mixture. Sprinkle with cheese; pour cream over all. Bake, uncovered, at 350° for 1 hour or until golden.

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 13 x 9 pan with oil.
  • Peel and cut garlic cloves in half or thirds.
  • Rub sides and bottom of dish with cut side of garlic cloves.
  • Leave garlic pieces in bottom of pan.
  • Layer half of potatoes in bottom of pan.
  • Salt and pepper.
  • Sprinkle with half the cheese.
  • Pour half the cream over potatoes.
  • Repeat layer.
  • Bake for 60 to 75 minutes until potatoes are done.
  • Push potatoes down into cream during the first 30 minutes of baking.
  • If top gets too brown cover with foil.
