Sarahs Fabulous Summer Pasta Salad Recipes
SARAH'S PASTA SALAD
This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
- In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.

This evolved over many a warm summer night in Brisbane. I take it to parties and it's always gobbled up immediately!

Yield 500 grams of pasta salad, 4 serving(s)
Number Of Ingredients 7
Steps:
- Put pasta on to boil.
- Halve tomatoes.
- Place tomatoes in large bowl with all other remaining ingredients, stir well, cover and leave.
- When pasta is al dente, drain, and then add to tomato mixture.
- The warm pasta will semi-cook the basil and garlic, releasing its flavour.
- Serve immediately, with crusty Italian bread and a nice glass of red wine.
SUMMER PASTA SALAD
A cold, uncooked sauce stirred through hot pasta makes an easy and nutritious meal on a hot day. Another favourite of mine from Alison & Simon Holst's "Very Easy Vegetarian Cookbook".

Steps:
- Cook the pasta in plenty of boiling salted water with about 1 tblspn of oil added. Drain when cooked.
- While pasta is cooking, cut the avocado and tomatoes into 1cm cubes and put in a bowl. Add the finely chopped onion, garlic and roughly chopped basil and capers.
- Mix the reaming ingredients thoroughly, and toss through the vegetable mixture.
- When ready to serve, put the hot drained pasta into a shallow bowl, toss half the sauce through it and spoon the rest over the top. Serve at once.
