OLD-FASHIONED PINEAPPLE COOKIES

I saw this recipe on the web and thought it looked so good I had to try it immediately - so I did! The results were wonderful. Even my fiance (who swears he doesn't like pineapple) thought they were great. I found a couple of similar recipes on zaar, but not one exactly like this.

Steps:

  • Preheat oven to 350.
  • Cream shortening and sugars together.
  • Add egg and mix well.
  • Add dry ingredients and mix well Add drained pineapple and mix well.
  • Add nuts and flavoring, mix well (yes, again).
  • Drop by spoonful onto greased baking sheet.
  • Bake for 15-20 minutes.

1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 cup crushed pineapple, drained
2/3 cup chopped walnuts
1/4 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • 1. preheat your oven at 350 degrees In a large mixing bowl cream your butter, brown and white sugar. There is no need for a mixer on any part of this recipe.
  • 2. add your eggs, pineapple and vanilla.
  • 3. In another mixing bowl, blend your flour, soda, baking powder and salt. Gradually add the dry ingredients to the wet. Fold in your nuts.
  • 4. Drop by spoonfuls on a lined cookie sheet with parchment paper. Bake for 12 to 15 minutes or until they start to brown.
  • 5. Let cool on a cooling rack. Frost with pineapple butter cream frosting
  • 6. Make your frosting
  • 7. After your cookies are cooled frost a little or a lot! These cookies stay soft and are absolutely heavenly. The amount you get depends on if you want them big or tiny. "Enjoy"

1 c margerine (her recipe says "oleo" lol)
1 c brown sugar
1 c white sugar
2 large eggs
1 c 8oz can crushed pineapple / do not drain (reserve two tablespoons for frosting with both liquid and pineapple)
1 tsp vanilla extract
4 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c chopped walnuts

This is my great great aunt's recipe. She still makes them for special occassions and they are a family favorite. They are very unique compared to any other pineapple cookie recipe I've ever seen.

Steps:

  • Mix the butter and the cream cheese in a large bowl then slowly add sifted flour until the ingredients form a soft dough. Cover and refrigerate for 2 hours.
  • Sift some powdered sugar on a cutting board (just a dusting- enough so dough won't stick when you roll it out). Gather a ball of dough the size of a walnut and roll on the cutting board into a circular shape. Sprinkle more powdered sugar as needed so the dought does not stick.
  • Place a small spoonful (approx. 2 teaspoons) of pineapple preserves in the middle of the circle. Either roll the dough up or fold over and seal the edges.
  • Place on a cookie sheet lined with parchment paper and bake at 350 degrees for 10-15 minutes (until the cookies begin to lightly brown on the bottom and edges.).

Instant Pudding mix makes these cookies very soft. You can try different variations of pudding mix too--chocolate pudding mix with peanut butter chips, banana pudding mix with white chocolate chips, etc.

  • Beat first 6 ingredients together until creamy.
  • Add next 2 ingredients.
  • Mix well.
  • Stir in chocolate chips.
  • Drop by tsp and bake at 350° for 9 minutes.

  • 1. Preheat the oven to 325 degrees. Grease cookie sheets. In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. In a separate bowl, combine the flour, baking powder, baking soda and salt. Gradually stir the flour mixture into the creamed mixture. Drop by rounded spoon fulls onto the prepared cookie sheets.
  • 2. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. OPTIONAL FROSTING: Stir together ingredients adding water slowly until a thin frosting is achieved. Spread over cooled cookies.

Steps:

  • Preheat oven to 350 degrees. In a large bowl, using an electric mixer, beat butter and sugar until smooth. Add egg, and beat until completely combined. With mixer on low, add flour, and mix just until incorporated.
  • Shape dough into 1-inch balls (about 2 tablespoons each). Place on baking sheets, at least 3 inches apart.
  • Moisten thumb with water, and gently press the center of each ball, making an indentation about 1/2 inch wide and inch deep. In microwave or on stove, heat jam until liquefied; spoon about 1/2 teaspoon into each indentation. Bake until cookies are golden brown around edges, 18 to 20 minutes. Transfer to a wire rack, and let cool completely. If storing, place in an airtight container at room temperature, up to 2 days.
