- Wash beans, trim ends and remove strings.
- Arrange beans in a vegetable steamer (or a colander that will sit nicely in saucepan), and place over boiling water.
- Cover and steam 5 minutes.
- Drain and plunge into cold water, drain again.
- Coat a large nonstick skillet (or wok) with cooking spray or peanut oil and heat until hot.
- Add gingerroot and garlic and saute 30 secs.
- Add beans, saute 5 minutes.
- Combine 2 tablespoons water and remaining 5 ingredients.
- Stir well.
- Add to beans, cook 30 seconds or until thoroughly heated, stirring constantly.

- Wash beans; trim ends, and remove strings. Slice beans in half lengthwise, and set aside.
- Combine soy sauce and next 5 ingredients, stirring until smooth. Set aside.
- Cook ginger and garlic in hot peanut oil in a large skillet over medium-high heat for 30 seconds, stirring constantly. Add beans and cook 3 minutes, stirring constantly. Stir soy sauce mixture, and add to beans; cook stirring constantly, 1 minute or until mixture thickens. Remove from heat, and sprinkle with a few drops of sesame oil. Serve immediately.
BLISTERED GREEN BEANS WITH SPICY CHILE SAUCE

- Preheat the oven to broil.
- Bring a large pot of water to a boil and season generously with salt. Prepare an ice bath in a large bowl. Blanch the green beans in the boiling water until tender but still crisp, about 2 minutes. Drain and immediately shock in the ice bath. Drain the beans and pat dry well.
- Add the Garlic Oil, chile paste, honey and salt to taste to a large bowl. Add the green beans and toss to coat. Transfer to 2 baking sheets and broil until brown and blistered in spots, 5 to 7 minutes. Serve immediately.
- Combine the olive oil and garlic in a small saucepan. Turn the heat to medium low and gently poach the garlic for 5 minutes; the oil should be at a very bare simmer but not boiling, otherwise the garlic will burn. Remove from the heat and allow to cool completely. Once cool, discard the garlic.

This is a great dish we have at a local chinese restaurant that I came home and played with. They're an excellent side dish. I store some thai peppers in oil that I use in place of the olive oil but regular olive oil is fine. This recipe is great if you cube up a chicken breast into 1/2" cubes and add it also.

- Wash and cut stems off green beans. Heat up skillet with 2 T olive oil. When hot toss in half the garlic. Just as it starts to pop add sesame oil and green beans and toss until lightly coated. As green beans warm up add soy and pepper flakes. Toss lightly and cover over med-low heat until green beans are tender.

- In a small bowl, toss the pork with 2 tablespoons of soy sauce, 1 tablespoon of rice wine, and the peppercorns. Marinate at room temperature while assembling the rest of the ingredients.
- In a separate bowl, combine the remaining tablespoon of soy sauce, the remaining tablespoon of rice wine, the stock, spicy bean sauce, hoisin, chili garlic sauce, sugar, sesame oil, and cornstarch. Set aside.
- heat a wok or large frying pan over medium-high heat and add the oil.
- When the oil is hot, add the beans and stir-fry them for 10 minutes, or until they begin to brown and blister. Remove the beans from the pan using a slotted spoon and pour off all but 2 tablespoons of the oil. Return the pan to the heat, and add the pork, garlic, and ginger. Stir-fry for about 3 minutes, or until there is no longer any pink color to the pork. Add the green onions and cook 1 minute. Add the reserved sauce and green beans and mix well. The sauce will begin to thicken and glaze the pork and beans.
- To serve, sprinkle with sesame seeds.
- Variation: Feel free to substitute chicken, beef or shrimp, or tofu for the pork.
