Steps:
- In a large bowl, combine strawberry puree, eggs and oil.
- Blend in sugar, cinnamon and baking soda.
- Add flour.
- Pour into 2 greased and floured 9x5" loaf pans.
- Bake 40-50 minutes at 350F.
- Cool completely before removing from pans.
- Serve with sweetened cream cheese.
ALMOND CUSTARD TART WITH STRAWBERRIES
We love how balanced this tart is-the custard filling has a subtle almond flavor, isn't overly sweet, and pairs beautifully with the crunchy oat crust. It makes an excellent healthy Easter dessert and is dairy-free to boot.

- Crust: Preheat oven to 350 degrees.
- In a medium bowl, whisk together oil, sugar, salt, and egg yolk. Stir in flour and oats until a crumbly dough forms. Press into bottom and up sides of a 9-inch fluted tart pan with removable bottom. Bake until set and light golden, about 20 minutes. Transfer to a wire rack to cool completely, about 1 hour.
- Filling: In a medium saucepan, heat milk, salt, and vanilla seeds until simmering around the edges. Meanwhile, in a medium bowl, whisk together yolks and sugar until pale and thick; whisk in cornstarch until smooth. Whisking constantly, gradually add half of milk to egg mixture, then pour egg mixture into saucepan. Bring to a boil over medium heat, whisking constantly until custard is thickened and bubbles once in the center, about 2 minutes.
- Using a rubber spatula, press custard through a sieve into crust; smooth with a small offset spatula. Cover surface directly with plastic wrap and refrigerate until well chilled, about 2 hours. Just before serving, arrange strawberries on top and sprinkle with almonds.

- Combine first 6 ingredients.
- Mix strawberries, eggs and oil.
- Add to dry ingredients.
- Stir carefully.
- Put batter in 2 greased loaf pans.
- Bake at 350° for approximately 1 hour. Insert toothpick in middle of bread; if it comes out clean bread is done.
- Cool 10 minutes before removing from pans.

- Form hole in middle. Mix eggs and oil and pour in hole.
- Add berries and mix by hand. Pour into 2 greased and floured loaf tins and bake at 325 degrees for 1 1/4 hours, or until done.
- Cool before cutting. Great with cream cheese. Bread may be frozen.

FRESH STRAWBERRY BREAD
A recipe from Cooking with the Noonday Chef 3 by Walter Lambert. Chef Walter, as he is known on a local news program, featured this recipe on his cooking segment. Produces a moist, dense loaf. The preparation time does not include time for the strawberries to sit in the refrigerator.

- In a bowl, place the sliced strawberries. Sprinkle the slices with the 2 tablespoons of sugar. Place in the refrigerator for several hours or overnight. This will create a nice syrup with the berries.
- Preheat the oven to 350°F.
- Blend together the flour, 1 cup sugar, baking soda, and salt in a large mixing bowl.
- In a medium mixing bowl, combine the oil, vanilla, eggs, strawberry slices and its syrup. Dump the strawberry mixture into the flour mixture, and mix just until blended.
- Pour the batter into a greased loaf pan (9 inches x 5 inches) and bake for approximately 50 minutes.
- HINTS: This bread is lovely with cream cheese. Egg substitute (like Egg Beaters) can be used instead of the eggs - just make sure you use the equivalent of 2 eggs. Chef Walter suggests variations of adding 1 1/2 cup chopped pecans or a bit of cinnamon to the batter, if you like.

This is my all time favorite. Always love getting this as a gift during the holidays! Make in small loaf pans and freeze the extras! Great for drop in guests & gift giving.

- Beat eggs, sugar and oil together.
