HAMBURGER NOODLE BAKE
This is my variation on "Grandma Dinner" served at my mom's house to her happy, hungry grandkids. It is homey, comforting fare... not gourmet, not too spicy, but quite satisfying when you're in the mood for a delicious ground beef casserole. Perfect with a hunk of crusty bread and a salad.

Steps:
- Cook and drain noodles according to package directions. Set aside.
- In a large skillet, brown ground beef, onion, red pepper and garlic over medium-high heat. Drain fat.
- To ground beef mixture in skillet, add salt, pepper, Worcestershire sauce, tomato sauce, diced tomatoes, water, oregano, basil and chili powder. Stir to mix well.
- Add noodles to ground beef mixture. Mix.
- In buttered 9x13" baking dish, layer half of ground beef/noodle mixture.
- Sprinkle cheddar cheese over all evenly.
- Top with remaining ground beef/noodle mixture.
- Cover with foil. Bake at 350 for 40 minutes.

- SET oven rack in center position; PREHEAT oven to 350°F ; SPRAY a 13 x 9 baking dish with non-stick cooking spray and set aside; GET all ingredients needed for recipe and place in work station; OPEN ingredient containers and have ready for when needed; BRING 3 quarts salted water to a boil.
- BROWN 1 lb. lean ground beef in a skillet over medium heat.
- COOK one 12 ounce package extra-wide egg noodles in rapidly boiling salted water until just slightly al dente; DRAIN noodles well without rinsing; RETURN noodles into the same cooking pot without heat; GENTLY stir in the remaining CREAMY-CHEESY NOODLES ingredients (one 16 ounce container sour cream, one 16 ounce container small curd cottage cheese, one 7 ounce can diced green chilies, and 1 tablespoon chives or snipped green onion tops; MIX gently until thoroughly blended.
- DRAIN ground beef when browned; RETURN skillet over medium heat; DRAIN one (10 ounce) can Ro-Tel brand diced tomatoes and green chiles; STIR in Ro-Tel, one 6 ounce can sliced olives (reserve 12 slices for the GARNISH), and one (1 1/4 ounce) package taco seasoning mix (or prepare my Recipe #364778 as instructed); SIMMER for 10 minutes or until most liquid is absorbed; REMOVE from heat.
- ADD 1/3 of the CREAMY-CHEESY NOODLES mixture into the bottom of greased baking dish.
- SPREAD 1/3 of the SEASONED GROUND BEEF mixture evenly in baking dish over the CREAMY-CHEESY NOODLES.
- SPRINKLE 1/3 of the MEXICAN BLEND CHEESE evenly over the SEASONED GROUND BEEF mixture.
- REPEAT layers in the same order and portions until all ingredients are used, finishing with the remaining MEXICAN BLEND CHEESE.
- GARNISH casserole with chives or sliced green onion tops and remaining 12 black olive slices.
- BAKE uncovered for 25 minutes at 350 F; ALLOW casserole to cool and set for 5-7 minutes before cutting and serving; SERVE; SNAP your fingers and shout,"OLE!".

- drain add the sloppy joe mix,soup,and mushrooms mix well heat until bubbly,gently stir in cooked noodles then pour into cassarole dish,sprinkle with cheese.
- bake 350 degrees for 20 to 25 minutes or until the casserole is thoroughly heated and cheese is melted.

TURKEY NOODLE BAKE
This recipe became the answer to my Thanksgiving leftovers. I created it in my kitchen a couple of years ago after I had purchased a too-large turkey. When my 4 year old son (a very picky eater) asked me if I could make this for him everyday, I knew I had done something right! You can use any type of milk (fat free, whole, 1 or 2%), and any type of sour cream you like. This recipe is best with home made noodles (recipe below). Also, if you have any leftover gravy, you can blend a 1/4 to a 1/2 cup when you combine all ingredients.

- Preheat oven to 375°F.
- Spray a 2-quart casserole with non stick cooking spray & set aside.
- Place a large pot on the stove with 4 quarts of water.
- Bring to a boil, adding salt if you'd like.
- Prepare noodles by mixing the flour, salt& eggs until a stiff dough forms, adding additional flour a tbsp at a time if too sticky.
- Divide dough into 6 smaller balls.
- Roll each ball between your hands until you have a 'thinner than a pencil' thickness.
- Break off pieces into 1 to 1-1/2 inch lengths.
- When all the noodles are prepared, place into the boiling water at once.
- Cook the noodles at medium high heat for approx 20 minutes; drain.
- Meanwhile, over medium heat, in a saucepan, combine 2 cups of the milk, and bouillon.
- Combine remaining 1/2 cup of milk with the flour.
- Mix until flour has dissolved, then immediately add it to the saucepan.
- Stirring constantly, cook until mixture thickens to an Elmer's Glue consistency.
- Add as much or as little pepper as you like, stir well.
- In a large bowl, combine the drained noodles, milk mixture and all remaining ingredients (except the cheeses).
- Stir until evenly blended.
- Spoon mixture into the prepared casserole dish and top with cheeses.
- Bake 25 to 35 minutes, or until hot and bubbly.
- Allow to stand 5 minutes before serving.

- Preheat the oven to 350 degrees.
- Cook the noodles accordign to the package directions, omiting the salt if desired.
- Spray 9x13 inch baking dish with nonstick spray.
- Spray a large nonstick skillet with nonstick spray and set over medium high heat.
- Add the red onion and bell pepper; cook, stirring occasionally, until softened, about 5 minutes.
- Add the beef to the onion/pepper mixture and cook till browned; drain off excess oil.
- Combine the beef mixture, noodles, tomatoes, 3/4 cup of cheese, parsley and pepper in the baking dish.
- Sprinkle top with remaining cheese and the crushed crackers.
- Spray the top with nonstick spray.
- Bake until hot and the cheese is melted (approx 40 minutes).

SALMON NOODLE BAKE
I like to whip this up after a day at work and relax while it's baking. If desired you can make it even faster by using two tins of cream of mushroom soup instead of the home made white sauce in the recipe.

- In a nonstick pan, cook the onion and green pepper in the liquid from the salmon until tender.
- Add the salmon and water chestnuts and mix thoroughly.
- Set aside.
- Prepare noodles using package directions adding the frozen vegetables for the last 5 minutes of cooking.
- Drain and set aside.
- Melt the butter in a sauce pan and add the hot red pepper, stir until bubbling and remove from heat.
- Add the flour and stir until smooth.
- Add a few tablespoons of milk and blend until smooth.
- Add the remaining milk and stir until blended.
- Return to a medium heat and cook, stirring constantly until thickened to a white sauce.
- Remove from heat.
- Add 1 cup of the cheddar cheese and stir until blended.
- Mix the cheese sauce, the noodles/veggies and the salmon mixture.
- Mix well and spread evenly in a 9" x 13" baking pan.
- Mix the bread cubes and garlic powder.
- Sprinkle evenly on top of salmon noodle mixture.
- Sprinkle evenly with 1/2 cup grated cheddar cheese.
- Bake at 350F for 20-25 minutes until hot and the bread cubes are browned.

- Mooncakes (月饼, yuèbǐng) Mooncakes are probably the most famous of all Mid-Autumn Festival foods. They symbolize the moon and family unity. The mid-autumn moon is full, and families with mooncakes in hand are harmonious, happy, and healthy.

- Edamame (毛豆荚, máodòujiá) and Small Taro (芋艿, yùnǎi) This is a Southern Chinese tradition. Both are typically boiled and eaten like snacks. “Taro” in the local Southern dialect sounds like “the coming of good fortune.”
- Crab (螃蟹, pángxiè) This is another thing from Bill’s family’s neck of the woods! This Southern addition to a Mid-Autumn Festival table is less traditional, but the fall is the best time to eat crab.
- Lotus Root (莲藕, lián’ǒu) Lotus root is chock full of auspicious symbolism in its name, shape, and texture. Firstly, its Chinese name, 莲藕, means “togetherness” (连, lián) and a “pair” (偶, ǒu).
- Pear (梨, lí) The pronunciation of pear means “to separate.” In my family, it was forbidden to share a pear because it symbolized that we’d separate! Even now, whenever I’m faced with a large pear that I can’t eat in one sitting, I still can’t share it with anyone else!
- Liquor (美酒, měijiǔ) Serving a little alcohol with a celebratory meal is something everybody can agree on. During the Mid-Autumn Festival, the traditional drink of choice is osmanthus flower wine.
