Steps:
- Rinse lime under hot water, dry and finely grate the zest.
- Squeeze the juice from the lime, set aside.
- Peel the avocado and mash it with the lime juice by using a fork.
- Add sour cream, chili, parsley, lime zest and season to taste with salt and sugar.
- Serve with penne or linguine pasta.

- Combine avocados, garlic, lime juice, green onions, cilantro, and tarragon in a food processor; puree until smooth.
- Melt butter in a saucepan over low heat. Stir in avocado puree and cook over low heat, stirring occasionally, until heated through, about 5 minutes. Add cream and cook until heated through, but not boiling. Season with salt.

FETTUCCINE WITH AVOCADO TOMATO SAUCE
I hesitate to call it a sauce, it's a lovely medley of flavours. You can add more garlic and adjust the rest of the seasonings to taste...but for me..the lime juice was the best addition to the sauce! If you like it spicy, add one more chili pepper to the mix! I paired it with a spinach salad to get more greens into my family and everyone cleaned their plates. Enjoy! **VEGAN OPTION: Choose pasta that's made without eggs.

Steps:
- Place a large pot of water on to boil.
- Heat the 1 tablespoon of olive oil in a large skillet, over medium heat. Add the onion, garlic and chili pepper; cook until softened, about 5 minutes. Add the tomatoes, salt & pepper and cook, stirring often, until the sauce has thickened slightly, about 10 minutes.
- Remove from the heat, and stir in the cilantro. Keep warm. Meanwhile, in a large pot of slightly salted water, cook the noodles until just tender, about 8-10 minutes. Drain well and transfer to a warmed serving bowl.
- Add the tomato sauce, avocados, 3 tablespoons olive oil (optional) and lime juice. Toss to mix well, and serve immediately.

- Bring water to a boil in a large pot with a lid over medium-high heat. Salt the water and add spelt spaghetti. Reduce heat to medium and cook for approx. 8 – 10 min., until al dente
- In the meantime, make the sauce and prepare the toppings. Peel avocado and remove the pit. Cut avocado flesh into small pieces. Cut tomatoes into quarters and roughly chop arugula. Set tomatoes and arugula aside for serving. Peel garlic clove and chop onion. Transfer avocado to a food processor or blender.
- Add garlic, chopped onion, olive oil, orange juice, agave syrup, and lime juice to food processor. Season with salt and pepper. Blend on high for approx. 30 sec., until smooth and creamy. Add vegetable stock or pasta water and blend on high for another 10 sec.
- When pasta is done, drain and transfer to a large skillet. Add avocado sauce and toss until pasta is well coated. Heat up the pasta on low heat for approx. 2 min. Season with salt and pepper and divide onto plates.
