DELICIOUS AVOCADO SANDWICH
This was always a lunchtime favorite with my gal pals. It's simple, delicious, and refreshing! The measurements for the ingredients are all approximate, as this sandwich is best when tailored to personal taste. Particularly scrumptious on potato, oat, or country white bread. Enjoy!

Steps:
- In a blender place peeled avocado, add a pinch of chile powder, juice of one lime, salt and pepper, and add some nonfat yogurt. Thin with ice water if necessary. Blend to a pouring consistency. Serve over mesclun, pink grapefruit segments and diced red pepper.
- Cut avocados in half; remove pits and gently scoop out insides, leaving shell intact. Combine the avocados, scallions, cucumbers, radishes, tamari, oil, garlic, and add to shells. Top with yeast, sprouts and sesame meal.
- Oxygen, or exposure to air is what causes your guacamole to turn brown. Making guacamole, or any avocado dish in advance make certain that you block out the air by making sure the surface of your dip is in contact with the plastic wrap.

CHICKEN AVOCADO AND BACON SANDWICH
Steps:
- Preheat the oven to 350 degrees F.
- Place the chicken presentation-side down on a baking tray and sprinkle with half of the salt, tarragon, pepper, thyme and garlic. Flip the chicken, then sprinkle with the remaining salt, pepper and garlic. Spoon the oil over the chicken and rub to fully coat. Add the remaining thyme and tarragon, and then bake until the internal temperature is 165 degrees F, about 40 minutes.
- Meanwhile, place the bacon on a foil-lined baking sheet and bake in the same oven for 8 minutes, then rotate the baking sheet and bake 8 more minutes. The bacon should be almost fully cooked.
- Chill the chicken until fully cooled.
- Using a very sharp knife, slice the chicken on a vertical bias across the breast into 1/8-inch-thick slices.
- Halve the ciabatta horizontally, then set it up open-face to build the sandwiches. Spread half of the ranch dressing onto the bottom piece of ciabatta. Stack the sliced chicken over the ranch, creating two or three layers. Cover the chicken with the sliced Cheddar and then top with the bacon.
- Bake both halves of the sandwich until the cheese melts, the bacon is crisp and the bread is toasted.
- Coat the top piece of ciabatta with the remaining ranch dressing. Top the bacon with the avocado, and then finish the sandwich with the top piece of bread. Cut into 4 pieces to serve.

AVOCADO SANDWICH
My mom used to make these fantastic sandwiches when I was a kid and I've always loved them. I've made a few alterations to her basic recipe, and it's so good. This sandwich can be altered in many ways, including the additon of some salsa to spice it up. Please share your thoughts if you prepare this sandwich, I'd love to hear your thoughts and I'd like to hear about any variations you might make.

- Avocado and Egg Grilled Cheese With Sriracha. Whether eaten for breakfast or lunch, this avocado and egg grilled cheese sandwich is a gift to your tastebuds.
- Turkey Bacon Avocado Club. A typical turkey club gets a bit of dressing up in this double-decker sandwich. Crispy bacon, turkey, avocado, spinach, and tomatoes are layered with toasted multigrain bread that is slathered with a lemon-garlic mayo (jarred mayonnaise with a little garlic powder and lemon juice).
- Turkey, Bacon, and Ranch Sandwich. This sandwich may sound basic, but it is actually anything but. Oven-roasted cherry tomatoes, homemade buttermilk ranch dressing, smoked turkey breast, provolone cheese, crispy bacon, and sliced avocado are all stacked on a salty pretzel bun.
- Peruvian Triple Sandwich. Referred to as "el treep-lay" in Peru, this triple-layer sandwich showcases thin slices of ripe avocado between mayonnaise-coated white bread (called pan de miga) with the crusts removed.
- Cemita: Mexican Pulled Pork Sandwich. This sandwich is named after the type of bun it is served on, a round, eggy roll with sesame seeds on top. In this version, the cemita is stuffed with pulled pork, adobo sauce, chipotle peppers, cilantro, shredded Mexican cheese, tomato, and, of course, avocado.
- Avocado and Chorizo Grilled Cheese Sandwich. Cheese makes an appearance in both the scrambled eggs and the sandwich itself in this deliciously rich breakfast grilled cheese.
- Grilled Chicken and Avocado Flatbread Sandwich. The red chili ranch dressing is the star ingredient of this copycat version of Longhorn Steakhouse's most popular menu item.
