EASY CRAB SOUP

30 years ago my friend Karen served this at dinner. I thought it was awesome then. People still like it when I serve it. Takes 15-mins from opening the tins of soup to serving. Great when hungry and rushed for time.

Easy Crab Soup image

Steps:

  • Open tins of tomato soup and place in saucepan.
  • stir in 1 cup water.
  • add curry powder, tabasco, crab and sherry.
  • bring to a gentle boil and simmer for 2-3 minutes.
  • Before serving, season with salt and pepper and add a cup of cream, flick on some parsley.
  • Serve with fresh crusty bread.

2 (440 g) cans tomato soup
1 cup water
2 teaspoons curry powder
Tabasco sauce, a few slurps
2 (170 g) cans crabmeat, drained and flaked
1 cup cream
1/3 cup dry sherry
salt and pepper

Crab and Avocado Soup image

Steps:

  • Melt butter in large pot over medium-high heat. Add onion and sauté until tender, about 5 minutes. Add flour and stir 1 minute. Add clam juice, broth, and half and half; bring soup to boil, whisking constantly. Reduce heat to medium and simmer until slightly thickened, whisking occasionally, about 5 minutes. Puree soup in batches in blender, adding 1 diced avocado, 2 tablespoons cilantro, chili, and lime juice to last batch. Return soup to pot. Add crabmeat and simmer until heated through, about 3 minutes. Season soup with salt and pepper.
  • Ladle soup into bowls. Sprinkle with remaining diced avocado and cilantro.

2 tablespoons (1/4 stick) butter
1 cup chopped onion
3 tablespoons all purpose flour
2 8-ounce bottles clam juice
1 1/2 cups canned low-salt chicken broth
1/2 cup half and half
2 medium avocados, peeled, pitted, diced
4 tablespoons chopped fresh cilantro
1 tablespoon minced seeded jalapeño chili
1 tablespoon fresh lime juice
1/2 pound crabmeat, flaked, picked over

Steps:

  • Melt butter in a 3-qt. saucepan; stir in flour, seafood seasoning, salt and curry powder. Cook until thickened and bubbly. Gradually add milk; cook and stir until mixture is hot (do not boil). , Remove cartilage from crab if necessary. Add crab and parsley to soup; cook and stir just until crab is heated. If desired, thin soup with additional milk; garnish with parsley.

  • Melt butter in a large saucepan over low heat. Stir in flour all at once, and cook until bubbly. Stir in Old Bay seasoning and Worcestershire sauce. Gradually stir in chicken broth, wine, and half-and-half.
  • Prepare gravy according to package directions, and stir into soup. Thin with more half-and-half if necessary. Simmer 10 minutes, stirring occasionally.
  • Stir in crabmeat, and season with hot sauce, salt, and pepper. Simmer 2 minutes, or until heated through.

Steps:

  • Place your your onion, celery and potatoes in a large pot.
  • Drain your crab meat and pour the crab meat liquid over all the veggies.
  • Add enough water to cover all of the vegetables.
  • Simmer over medium heat until veggies are tender.
  • Melt butter in heavy saucepan.
  • Add flour, making a roux, and blend until smooth.
  • Stir constantly while slowly adding half and half.
  • Cook and stir with wire whisk until thick and smooth.
  • Add your mix to the veggies and combine.
  • Add your crab meat, salt, and pepper.
  • Mix until combined and serve.
