Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
- Bake in preheated oven for 20 minutes, or until heated through and browned.

- 1. Heat oven to 400^. Spray cookie sheet with cooking spray. Squeeze all moisture from spinach then fluff with fork. In a large bowl, mix all ingredients together, except sauces. Shape into 1-inch balls; place on cookie sheet. Bake 10-15 minutes or until golden brown. Immediately remove from pan. Serve with warm sauces. --- Note: You may like to press dough into a sprayed 11x7-inch baking dish and bake according to directions. Cut into squares and top with your favorite sauce.
SPINACH BALL LASAGNE
Try this lasagne with spinach and cheese for a meat-free family meal. it's freezable so you can make it ahead - or you could buy a white sauce for ease

Steps:
- First, make the white sauce. Melt the butter in a saucepan, then add the plain flour. Stir continuously until a paste forms and continue cooking for 2 mins. Add the milk to the roux gradually, stirring as you go, until you get a smooth sauce. Keep cooking for 5-10 mins more, stirring continuously, until the sauce has thickened. Leave to cool.
- To make the spinach balls, cook the spinach in the butter until it is warmed through, then stir in a grating of nutmeg and the garlic. Fry for a minute, then stir in the breadcrumbs and cheese. Tip into a dish and stir in the egg to form a stiff paste. Wet your hands and roll about 18 spoonfuls of the mixture into balls. Put them on a baking tray and chill for 30 mins.
- Heat oven to 190C/170C fan/gas 5. Fry the spinach balls in batches in the oil until lightly browned. Spoon some white sauce into the base of a medium baking dish and tip in six spinach balls. Drizzle over 2 tsp pesto, then place half the lasagne sheets on top, overlapping, add more white sauce, six more spinach balls, then a little more pesto. Place the remaining lasagne sheets on top, cover with white sauce, then dot over the last six spinach balls. Drizzle over more pesto and scatter over the remaining cheese. Bake for 30 mins or until the lasagne sheets are cooked through. Scatter over some basil leaves, if you like.

These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- Defrost spinach, drain and squeeze dry.
- In a large bowl combine all the ingredients.
- Mix well.
- Using teaspoons full, roll spinach into 1-inch round bite-size balls.
- Place on a cookie sheet coated with a non-stick cooking spray and bake for 20 minutes in a 350 degree oven.

SPINACH CHEESE BALLS (USING CANNED SPINACH)
Another way to use canned spinach from Popeye website. Can be frozen after shaping into balls then cover with foil. Freeze to firm and when frozen remove from cookie sheet and store in freezer bag. Do not thaw before baking.
