Steps:
- In a large bowl, combine the spinach, Worcestershire, egg, and salt and pepper, to taste. With a whisk, mix the ingredients until egg is broken up and incorporated. Add the meat and with your hands, mix until thoroughly combined. Shape the meat mixture into 4 even patties, to fit the size of the kaiser roll, and put a 1/4-inch slight dimple in the middle of each patty to allow it to cook evenly.
- Heat the oil in a large skillet over medium-high heat. Alternately, heat a grill to medium (350 degrees F) and rub the grate with a towel dipped in oil.
- Heat the broiler on low heat.
- Add the patties to the skillet, and cook for about 4 to 6 minutes. Flip the burgers and cook another 4 to 6 minutes for medium-rare burgers. Alternately, grill the patties uncovered for 4 to 6 minutes, then flip and grill for another 4 to 6 minutes. Top each patty with a piece of cheese and put under the broiler to melt the cheese. Alternately, close the grill top, and cook until the cheese is melted.
- For the each burger, spread the bottom of the roll with 1/4 of the mayonnaise. Put the burger on the mayonnaise and top with 2 slices of the bacon and some of the onions. Cover with the top of the roll and serve.
- Combine all the ingredients, except the onions and bay leaf, in a medium saucepan over medium heat. Stir until the sugar is dissolved, and then bring to a boil. When the mixture comes to a boil, stir in the onion. Remove the pan from the heat and add the bay leaf. Let sit at room temperature until cool, at least 1 hour.
- Combine all the ingredients in a small bowl until evenly mixed. Cover and refrigerate until ready to use.
BACON-STUFFED BURGERS
I came across this recipe years ago and added the pork sausage to perk it up. My husband claims these are the best burgers he's ever tasted, and I have to agree. They're great served with some crunchy dill pickles.

BACON BIT BURGERS
From the April/May 2006 issue of Every Day with Rachael Ray. Tried these tonight and they were fabulous, so wanted to post them so I didn't lose the recipe. Enjoy! These are NOT as difficult as the recipe sounds.

Steps:
- In large skillet over medium heat, cook bacon until crisp, about 4-5 minutes. Remove from pan and drain on paper towel lined plate.
- Discard all but about 1 T. of the bacon drippings.
- Chop 1/4 of an onion finely, then slice the other 1 3/4 onions.
- Sweat the chopped onion in the reserved bacon drippings for 2-3 minutes. Remove from pan and combine with the bacon.
- Coat pan with the olive oil and drop in the sliced onions. Let sweat until soft and slightly browned, about 10 minutes. Remove and place in bowl; keep warm.
- While the onions are sweating, combine the sirloin, Worcestershire, hot sauce, grill seasoning, and the bacon/onion mixture. Form into 4 equal-sized patties.
- Cook burgers, covered, in skillet, about 4 minutes per side for medium-rare and 6 minutes per side for medium-well.
- Place a slice of cheese on each burger and cover over low heat to melt the cheese.
- Stir steak sauce into the cooked sliced onions.
- Toast the buns if desired.
- Serve burgers with the smothered onions on a toasted bun.
- *NOTE* I served these without the buns and enjoyed them that way also. Just topped the burgers with the smothered onions and left the bun out of the equation.

BACON CHEESEBURGER BITES

Steps:
- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.
BACON LOVERS BURGER
I got the basic recipe from a friend and jazzed it up a bit. His recipe called for Bacon Bits and I used real bacon, baked in the oven. One of the best burgers I have made. I recommend baking the bacon in th oven instead of pan frying.

Steps:
- For Bacon: Preheat the oven to 375 degrees.
- Line a cookie sheet with aluminum foil and parchment paper (this saves on clean up time).
- Place all the bacon on the cookie sheet and bake for 10 minutes. Check the bacon; you might have to bake it for about 5 minutes more.
- Take bacon out of the oven (leave the oven on; but turn it down to 350 degrees) and let cool on a paper towel covered plate. When cool enough to handle, chop 6 slices of the bacon into small bits. There should be 2 to 3 extra slices put aside for topping the burger.
- For the Burgers: In a medium bowl, mix together the ground beef, egg, breadcrumbs, chopped bacon, and sea salt. Divide into 3 patties.
- Sear the patties on the stove top; 3 minutes for the first side on medium-high heat. Then turn the heat down to medium and sear the second side for about two and half minutes.
- Then, put the seared burgers on a cookie sheet lined with aluminum foil and parchment paper and pop into the oven for about 15 to 20 minutes.
- After 15 to 20 minutes take the purger out of the oven. Place on a plate covered with paper towels and let drain for a minute or two.
- Put on toasted bread, buns, or whatever you like to eat a burger on and top with you favorite condiments. Don't forget the 2 to 3 slices of bacon tha twas put aside.

- Process the bacon in a mini food processor on the "chop" setting until finely ground. Mix it into the beef with the remaining ingredients.
- Form the mixture into four 3/4-inch-thick patties. Use your thumb to make a shallow dimple in the middle of each burger. This helps them retain their shape.
- Heat a well-seasoned cast-iron skillet over medium heat, about 3 minutes. Add the burgers. If the skillet is well-seasoned, there's no need to add oil. Otherwise, add a tablespoon of oil to the pan before adding the burgers.
