BACON OATMEAL BREAKFAST COOKIES WITH MAPLE GLAZE
All the flavors that make up the perfect breakfast in one cookie!

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, chop the bacon, and set aside.
- Beat the butter, white sugar, and brown sugar together in a large mixing bowl until fluffy with an electric mixer on medium speed, then mix in egg, and vanilla extract until thoroughly combined. Whisk the flour, baking soda, salt, and cinnamon together in a bowl, and stir the flour mixture into the butter mixture. Gradually stir in the oats and bacon, about 1/3 cup of oats at a time, and cover the dough. Refrigerate at least 1 hour.
- Preheat oven to 375 degrees F (190 degrees C). Thoroughly grease baking sheets.
- Scoop about 1/3 cup of dough per cookie, roll into balls, and place the balls at least 3 inches apart on the greased baking sheets. Use a fork dipped in water to flatten the balls slightly.
- Bake in the preheated oven until the cookies are golden brown with slightly browner edges, 10 to 12 minutes. Allow to cool on baking sheets 3 to 5 minutes before removing to finish cooling on racks.
- To make glaze, whisk confectioners' sugar, water, and maple syrup together in a bowl until smooth. Let the glaze stand about 5 minutes to slightly thicken; drizzle onto the tops of the cookies. Allow glazed cookies to stand about 20 minutes to set up before storing.

Steps:
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg. Combine flour and baking soda; gradually add to creamed mixture. Stir in bacon, cornflakes and raisins. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. Store in the refrigerator.

BACON BREAKFAST COOKIES
The only bad thing about these cookies is that it's impossible to eat just one or two. They are not too sweet, and the bacon adds the most amazing flavor. I have made these with all white flour, half white/half whole wheat, and all whole wheat flour, and all tasted wonderful.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix flour, sugar, and baking soda in a bowl. Stir in bacon bits, butter, and egg until well blended. Fold corn flakes and Cheddar cheese into flour mixture. Drop spoonfuls of the dough 2 inches apart onto prepared baking sheet.
- Bake in preheated oven until golden brown, 13 to 15 minutes.

BREAKFAST COOKIES WITH BACON
I as at the General's house for a brunch and these were so good I had to ask for the recipe! They're sweet and salty - a favorite combination of mine. My son asked me to make them the other day and I searched and couldn't find anything like them so figured I'd post it to keep the recipe alive. Hope you enjoy!

Steps:
- cook bacon till crisp - then break into small pieces.
- Beat together butter and sugar till fluffy, beat in egg, combine dry ingredients and mix into butter mixture.
- Add bacon, corn flakes, and raisins and stir in by hand.
- Drop by teaspoonful onto UNgreased cookie sheet 2" apart.
- Bake 350 for 15 minutes. Cool 1 minutes, move to rack.

- Mix flour, soda and sugar.
- Stir in bacon crumbles.
- Mix in margarine and egg.

BACON COOKIES
Pliable chewy Bacon Cookies with a touch of maple. You must keep your eyes on these during the last couple of minutes. They get brown significantly faster during the end of baking. Slice Bacon into small pieces before frying then you won't have to crumble it. Press the Bacon between layers of paper towels when cool enough. You will have a buttery cookie with Bacon and not a Bacon grease cookie.

- In a large mixing bowl, beat together butter, brown sugar and sugar until fluffy.
- Stir in eggs and maple syrup and beat for 1 more minute.
- In a small bowl, combine flour, baking soda and salt and add in batches to mixing bowl. Beat just long enough to incorporate.
- Stir in the bacon pieces by hand.
- Drop by tablespoons 2 inches apart onto cookie sheets.
- Bake at 375 degrees for 7-10 minutes, until golden brown.
CHEESE & BACON BREAKFAST MUFFINS
This one was given to me by a girlfriend and it was yummy (we had regular size). Still have to make it myself. I have included cooking the bacon in the cooking time. UPDATE quizzed the girlfriend, she gave the recipe as is not as she does - so o'kay the difference is she used 6 slices of short rindless bacon (which is basically just the bacon meat only - no fat), therefore yes you would need the oil, she felt that way was healthier than the bacon fat.

Steps:
- In a frying pan (skillet) fry bacon over a medium-high heat until light and golden stirring often, about 4 minutes.
- Remove to a kitchen paper covered plate.
- Increase heat to high, add oil and mushrooms to the frying pan and cook for 5 minutes till tender and then set aside to cool.
- Preheat oven to 200 degree celsius.
- Grease a 12 hole muffin tin (regular size) or a 6 texas size (3/4 cup) muffin tin.
- Sift flour, baking powder and salt and pepper into a bowl and add cheese and chives and mix together.
- Whisk butter, egg and milk in a jug and pour into dry ingredients, stirring gently until almost combined.
- Fold through the bacon and mushrooms.
- Spoon mixture into prepared pan.
- Bake for about 15 to 18 minutes for regular size muffins and about 20 to 25 for texas size.
