Steps:
- Preheat the oven to 375 degrees F and fit a baking sheet with a wire rack.
- In a small saucepot, mix the maple syrup, red pepper flakes, orange juice and 1/4 cup water. Bring to a boil, then remove from the heat.
- Line up the bacon slices on the wire rack and brush with the hot maple syrup mixture. Sprinkle some cheese on each piece of bacon. With a skewer in hand, fold the end of a piece of bacon in half lengthwise and press the skewer through the end. Do this to 4 pieces of bacon, spreading them out evenly across the skewer, and place the skewer on the baking sheet. Twist the bacon pieces into long spirals so as to create straws. Take another skewer and skewer the bottom of each piece of bacon to keep the bacon twisted. Do this to all the bacon.
- Bake until the bacon browns, about 35 minutes. Let cool slightly on the rack; the bacon will get crunchy as it sits. Serve immediately.

Steps:
- Preheat the oven to 325 degrees F.
- Put the softened cheese and butter in the bowl of a heavy-duty electric mixer. Using the heaviest mixer paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
- In a large bowl, sift 3 cups of the flour with the salt, black pepper, cayenne pepper and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press; you may not need to add all the flour.
- Lightly spray 4 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips that run the length of the pan. Repeat until the pan is full. Bake until straws are golden brown and crisp, about 20 minutes.
- With your hands or a sharp knife, break or cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack. When they are completely cool, serve or store in a tightly covered container.

Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- On a lightly floured work surface, roll the puff pastry into a large rectangle, 1/4-inch-thick.
- Rotate the pastry so that the longer side is facing you. Spread the mustard evenly over the pastry. Lay the bacon slices on the pastry, long side facing you, leaving a small gap in between each slice. Trim any messy edges that spill over the puff pastry, to neaten the rectangle into a straighter edge. Sprinkle the Cheddar over the bacon. Cut in between each slice to form individual pastry-bacon strips.
- Carefully twist each strip 4 or 5 times, so it looks like a curly straw. Place on the prepared baking sheet and brush with beaten egg. Chill in the fridge for 15 to 20 minutes.
- Remove the twists from the fridge and brush a second time with beaten egg. Bake until the pastry is well risen and golden-brown, 15 to 20 minutes. Set aside to cool.

My daughter has made these for our Thanksgiving & Christmas celebrations. They're a tasty appetizer. I'm posting this because I almost lost this recipe once already and need a safe place to store it! (From the America's Test Kitchen Family Cookbook)

- On a clean surface, sprinkle ¼ cup of the Parmesan cheese evenly in a square. Place 1 sheet of puff pastry on top, then sprinkle another ¼ cup cheese over it. Use a rolling pin to roll the sheets slightly (from about ¼-inch thick to about ?-inch thick).
- Using a pizza cutter, cut the puff pastry into long, thin strips about ½-inch wide. (The length will vary depending on the brand of puff pastry. Just make sure the strips aren't longer than your baking sheets.)
- Place a piece of bacon on top of a strip of dough and press lightly. Grab the dough at both ends and twist it. Place the twist onto a prepared baking sheet, and lightly press the ends onto the parchment paper so that they stick and hold the twist in place. Repeat this entire step with the remaining dough strips from the first sheet of puff pastry, then sprinkle ¼ cup Parmesan cheese evenly over the finished twists.
