BACON-HORSERADISH SMASHED POTATOES

Horseradish and bacon make these spicy, salty, hearty potatoes just what your meal needs.

Bacon-Horseradish Smashed Potatoes image

Steps:

  • Put the potatoes, garlic and thyme in a medium saucepan, cover with cold water by about an inch and season generously with salt. Bring to a simmer over medium heat and cook until the potatoes are very tender and a thin knife will easily pierce through the center of the potatoes, about 20 minutes. Drain and discard the thyme.
  • Heat the milk in a microwave-safe bowl or measuring cup in the microwave until hot, about 1 minute. Using a potato masher or large fork and adding the hot milk gradually, smash the potatoes and garlic into a chunky puree. Stir in the butter, horseradish, sour cream and bacon; season with salt and pepper.

Steps:

  • Put the potatoes in a large pot and cover with cold water by 1 inch; season generously with salt. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, 20 to 25 minutes.
  • Meanwhile, combine the milk, horseradish and a pinch of salt in a small saucepan. Bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until the horseradish is tender and infuses the milk, about 10 minutes (it's OK if the mixture looks curdled). Cover to keep warm.
  • Drain the potatoes well, then return to the pot over low heat. Cook until the excess liquid evaporates, 1 to 2 minutes. Add the sour cream and butter and smash with a potato masher until the butter is melted and the potatoes are mostly smooth but with some chunks. Mash in the milk mixture and parsley until creamy; season with salt and pepper. If the potatoes still seem thick, add more warm milk as needed. Transfer the potatoes to a serving dish.

Horseradish-Bacon Twice-Baked Potatoes image

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • One at a time, hold each potato with a kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Discard 2 of the potato skins. Mash the flesh with 6 tablespoons butter and 3/4 cup sour cream until smooth. Stir in the chives, parsley and 2 to 3 tablespoons horseradish; season with salt and pepper. Melt the remaining 3 tablespoons butter; brush the potato skins with 1 tablespoon melted butter and season the insides with salt and pepper. Set on a baking sheet.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling starts browning and the skins are crisp, 18 to 20 minutes. Remove from the oven and drizzle with the remaining 2 tablespoons melted butter.
  • Combine the remaining 1/4 cup sour cream and 2 tablespoons horseradish in a small bowl. Top the potatoes with the horseradish cream, bacon and more chives.

Mashed Potato Bacon Horseradish Bake image

Steps:

  • Peel, cube and boil potatoes in salted water. Drain and mash with sour cream, milk, and butter. Add horseradish and mix well. Chop bacon and saute in olive oil. Cook until crisp. Remove bacon from pan and add finely chopped onion and finely diced garlic. Saute until lightly browned. Finely chop parsley. Add onion, garlic, bacon, parsley, cheese, salt, and pepper to mashed potatoes. Add more milk if mixture seems too thick. Transfer mixture to a buttered casserole dish. Lightly dot with additional butter and bake at 350 degrees until top is lightly browned. Cooking time does not include boiling potatoes.
  • Substitute your favorite cheese in this recipe. Cheddar is a good one.

  • Bring a large pot of water to a boil and salt it generously. Add the potatoes to the water, return to a boil, and lower the heat to maintain a simmer. Cook the potatoes just until fork tender and drain immediately in a colander. Let the potatoes stand in a colander to drain for at least 3 minutes, then transfer the still hot potatoes to a large mixing bowl. Stir in the thinly sliced white parts of the green onions, then drizzle the apple cider vinegar over the top and gently toss. Cover with plastic wrap and put in the refrigerator to chill completely before proceeding.
  • When the potatoes are cold through and through, remove the plastic wrap and add the crumbled bacon (reserving 2 tablespoons for garnish), chopped hard-boiled eggs (if using), mayonnaise, 1 tablespoon of the horseradish, and thinly sliced green parts of the green onions (reserving 2 tablespoons for garnish).
