- For the Chipotle Mayonnaise:.
- Mix together ingredients until combined.
- For the Burgers:.
- Divide the ground beef into four 1/3 pound burgers. With a light hand, shape into patties. Season both sides with a salt, pepper and garlic powder. Set aside until ready to grill. May, also, be pan fried.
- Heat grill (or pan) to medium - medium-high heat and grill for a 4-7 minutes on each side until desired doneness. During the last minute of cooking , add a slice of cheese over each burger and close cover until cheese begins to melt. While the burgers are cooking, add the onion slices and allow them to char a bit on each side and begin to soften. Remove burger and onions from grill and allow to rest for 2-3 minutes before serving.
- Place a burger on each toasted bun bottom, topping with 2 slices of bacon and 4-5 jalapeno slices. Slather some of the chipotle mayo on the top bun and place a grilled onion round on top. Add lettuce, if so desired, and top with the top half of the bun.

- Start with bottom bun. Slather with mayo ( how much is dependent on personal taste.).
- Layer jalapeño, onion, and shredded lettuce.
- Add hamburger patty, and sliced cheese.
- Top with tomato, bacon, and top bun.

JALAPENO, AVOCADO AND BACON BURGERS
A recipe from Rachael Ray. This is a burger from Bar Annie resraurant in Houston. It's a half-pound patty. So feel free to do small patties ;)

Steps:
- Preheat a grill to medium and place a cast-iron skillet on top. Add the chiles and cook until softened and the skin is charred, about 10 minutes. Transfer the chiles to a bowl, cover and let cool slightly. Remove and discard the stems, skin and seeds; finely chop the chiles.
- Meanwhile, cook the bacon in the skillet until crisp. Discard all but 1 tablespoon of bacon fat; chop the bacon.
- In a large bowl, combine the chopped bacon, the reserved bacon fat, the beef and half of the chiles. Form into 6 patties; season with salt and pepper.
- In a medium bowl, combine the queso fresco, mayonnaise, buttermilk, 1 tablespoon olive oil and the remaining chiles. Season with salt and pepper, cover and refrigerate.
- In another bowl, toss the avocados, cilantro, onion and remaining 1 tablespoon olive oil; set aside.
- Grill the burgers, flipping once, for about 10 minutes for medium-rare. Just before the burgers are finished cooking, grill the buns until toasted, about 1 minute. Place a burger on each bun bottom, top with some of the avocado salad, drizzle with some of the queso fresco dressing and set a bun top in place.

JALAPENO CHEDDAR BURGERS
I used to saute onions and fresh jalapenos to top our grilled cheeseburgers. Not any more! I mix the chopped fresh jalapenos, onions and shredded cheddar right into the hamburger patties. Oh, my. To complete the flavor attack you could add slices of crispy bacon to the pile....your choice!
