MOM'S CHICKEN CACCIATORE

When Valerie Bertinelli was growing up, chicken cacciatore was a standard weeknight dinner. It's one of many recipes she learned from her mom, Nancy, over the years. "I've been making it so long, I don't remember when I started!" she says. Using just one pot makes for an easy cleanup, and though her mom originally incorporated the whole chicken, Valerie's version calls only for thighs. "They're more forgiving, especially for beginners.

Mom's Chicken Cacciatore image

Steps:

  • Sprinkle the chicken thighs with salt and pepper on both sides, then toss them in a bowl with the flour to lightly coat.
  • Heat the olive oil in a large wide pot over medium-high heat until shimmering. Add the thighs and cook until golden brown on both sides, 3 to 5 minutes per side. (Do this in batches if necessary.) Remove the thighs to a plate.
  • Add the onion and mushrooms to the pot and cook, stirring, until the onion is softened and the mushrooms are lightly golden, about 5 minutes. Add the garlic and bell pepper and cook, stirring, until the pepper is just starting to soften, about 1 minute. Add the wine and bring to a boil, then cook, scraping up any browned bits, until reduced by about half. Add the oregano and rosemary. Add the tomatoes and their juices and bring to a simmer. Add the olives and capers.
  • Return the chicken to the pot, nestling it in the sauce. Reduce the heat to keep the sauce at a gentle simmer and cook until the chicken is cooked through, 25 to 30 minutes. Season lightly with salt and pepper and top with the basil.

6 bone-in, skin-on chicken thighs (6 to 7 ounces each), skin removed

8 ounces sliced cremini mushrooms
4 cloves garlic, minced
1 red bell pepper, thinly sliced

1 28-ounce can whole tomatoes, cut up with kitchen shears
3/4 cup halved pitted black olives
2 tablespoons drained capers
1/4 cup torn fresh basil

Steps:

  • Mix all ingredients except chicken in saucepan and simmer 15 minutes.
  • Place chicken pieces in 9 x 13 inch pan, skin side up.
  • Salt and pepper.
  • Pour sauce mixture over chicken.
  • Bake about 1 1/2 hours in 350° preheated oven, uncovered.
  • Do not stir or turn chicken.
  • Chicken will be brown.
  • Serve with pasta or rice or polenta.

Steps:

  • Coat chicken with flour. In 12-inch skillet, heat oil over medium-high heat. Cook chicken in oil 15 to 20 minutes or until brown on all sides; drain.
  • Cut bell pepper and onions crosswise in half; cut each half into fourths.
  • Stir bell pepper, onions and remaining ingredients except cheese into chicken in skillet. Heat to boiling; reduce heat. Cover and simmer 30 to 40 minutes or until juice of chicken is clear when thickest part is cut to bone (at least 165°F). Serve with cheese.

  • Mix all ingredients in a small cooking pot. Heat on low / low-medium and stir until brown sugar and butter melt together and all ingredients are blended smooth. Continue to keep warm.
  • Take 12 fresh chicken wing pieces (or frozen) and drop into fryer that has been preheated to 350 degrees. Cook for 9-12 minutes until crispy and golden brown. (NOTE: may cook faster with fresh chicken).

  • 1. Dice onion on a cutting board and layer onto the bottom of the slow cooker. 2. Place 20 whole cloves of garlic on top of the pile of onions 3. Place the chicken in the crock pot over the garlic-onion mixture 4. In a large bowl, combine ingredients 4-14 mixing well with a spatula until all spices are incorporated, making the tomato sauce 5. Pour the tomato mixture over the chicken 6. Place another 20 cloves of garlic on top of the tomato mixture and push them down into the slow cooker so that they are imbedded into the sauce 7. Put the lid on the slowcooker and cook on low heat for 6-7 hours, or on high heat for 3-4 hours.
