Steps:

  • Combine all ingredients in large container. Serve on ice.

64 ounces orange juice
64 ounces pineapple juice
750 ml light rum
750 ml coconut rum
grenadine (splash for color)

BAHAMA MAMA

This is a great summer drink from Dale Degroff (The Essential Cocktail) that will go by the pitcher! This recipe is by the glass, though, for sipping on the patio. If you don't have all four rums, you can improvise by doubling up (I would recommend making sure to use dark rum and coconut rum, however). Angostura bitters really make the drink, but could be left out if you don't have them (usually found in the tropical drink section at a supermarket or liquor store).

Steps:

  • Combine rums, juices, grenadine and bitters in a glass with ice. Shake well, or stir if you do not have a shaker (two glasses top-to-top work well as a shaker, just make sure they seal tightly).
  • Pour into a large glass and garnish with the cherry and orange slice, if desired.

3/4 ounce white rum
3/4 ounce golden rum (anejo)
3/4 ounce dark rum (preferably Myers's)
1/2 ounce coconut rum
3 ounces unsweetened pineapple juice
2 ounces orange juice (preferably fresh-squeezed)
1 teaspoon grenadine
1 dash Angostura bitters
1 maraschino cherry (optional)
1 orange slice (optional)

  • Conch Salad. Bahamians are famous for their conch dishes. And what better way to showcase this delectable sea snail than with a fresh, raw conch salad?
  • Bahamian Boiled Fish. One of the perks to island life is the easy access to a fresh catch of the day. Travel across the island, and you’ll find boiled fish is a popular menu item commonly eaten for breakfast.
  • Conch Fritters. You can’t talk Bahamian appetizers without talking conch fritters. Conch fritters are a delicacy in the Bahamas and a must for any visitor.
  • Traditional Johnny Cakes. On a trip to Nassau, I quickly came to the realization that Johnny cakes are served everywhere. And I couldn’t be more delighted.
  • Pigeon Peas and Rice. While the name may not sound the most appetizing, this side dish is a winner! It’s full of sweet, salty, and savory flavors. Simmer pigeon peas with rice, onion, red bell pepper, corn, tomatoes, spices, and chicken stock.
  • Bahamian Mac and Cheese. I guarantee you’ve never had mac and cheese quite like this! The Bahamian take on mac and cheese is insanely delicious. Elbow pasta is paired with a cheesy egg custard and baked to perfection.
  • Conch Chowder. Conch chowder is a classic staple in Bahamian cuisine. This soup is rich, hearty, and bursting with flavor. The recipe uses fresh conch, crispy bacon, clam juice, fish sauce, white wine, veggies, fresh herbs, and spices.
  • Bahamian Curry Chicken. This crave-worthy comfort food is a common Bahamian dish for lunch or dinner. It’s full of spice and other satiating ingredients that will satisfy a very hungry appetite.

14 BEST BAHAMIAN TRADITIONAL DISHES TO TRY [BEST LOCAL …

From twomonkeystravelgroup.com
  • Conch. Conch is the main ingredient in most of the Caribbean island dishes. Previously, the raw conch came from the wild nature, presently, the conch is bred on the farm and it’s as tasty as the wild one.
  • Conch Salad. The conch is sliced in dice and mixed with tomatoes, shallots, scotch bonnet pepper, paprika, celery, lime juice, and other herbs. It has a salty, sweet, and sour taste at the same time.
  • Conch Fritter. If you want a crunchy and tender texture at the same time, conch fritter is the best choice. It has a savory and spicy taste that comes from the pepper and hot sauce as the conch seasoning.
  • Grilled Conch. This grilled dish can never go wrong. You can try this grilled conch in the Bahamas in almost every place. They seasoned this conch with lime juice, butter, minced garlic, black pepper, and hot chili.
  • Cracked Conch. Using the same cooking technique as conch fritters, cracked conch uses a different conch as the main ingredient. Crayfish, an Arthropod that locals call as the queens of conch.
  • Rock Lobster. Rock lobster, or in this case is a spiny lobster that is widely consumed in the Bahamas. Besides being consumed by the locals and visitors, the spiny lobsters are also majorly exported in the Caribbean.
  • Souse. Wants to escape from seafood? Then you have to try Souse. This dish is a traditional stew made from land meat (it can be chicken, goat, pork, or beef) and is seasoned with onion, lime juice, pepper, celery, and bay leaves.
  • Pigeon Peas & Rice. Do not read it as Pigeon.Peas.and.Rice. If you read it that way, you might be thinking that this dish is made from a pigeon, but it’s not.
  • Boiled Fish & Grits. The simple way of processing a fish is by boiling it. The locals consume boiled fish as a breakfast menu and mostly appear at special occasions such as family gatherings every Sunday, or during Easter and Christmas.
  • Baked Macaroni & Cheese. Macaroni and Cheese might look-alike with Mac and Cheese, but the Bahamas has its own Macaroni and Cheese signature. This dish was brought to the Bahamas by the colonials in the 18th century and the locals modified it with the available seasoning in Bahama.
