BAJA QUESADILLAS

I found this recipe on the Idaho Bean Commission web site, and it's a keeper. Next time I'll add some corn, but otherwise this is really tasty and you won't miss the meat. I didn't use cooking spray or the oven--just cooked on the stove in a little butter. I skipped the sour cream because I didn't think it needed it.

Steps:

  • Spray large skillet with cooking spray and heat over medium heat until hot.
  • Saute zucchini, onion, garlic, jalapeno chili, and cumin until crisp-tender--about 5 minutes.
  • Add beans to side of skillet and coarsely mash about half the beans.
  • Mix beans, tomato, and cilantro into onion mixture and cook 1 to 2 minutes.
  • Spoon 1/3 cup mixture on one side of each tortilla and sprinkle with 1 1/2 tablespoons cheese.
  • Fold tortillas in half and spray both sides with cooking spray.
  • bake on cookie sheet at 450 until browned and crisp, 5 to 7 minutes, or cook in large skillet over medium heat until browned, 2 to 3 minutes on each side.
  • Garnish quesadillas with salsa and sour cream.

1 zucchini (medium, cut lengthwise in half, and sliced)
1 cup onion, sliced
1 teaspoon garlic, minced
1 jalapeno chile, minced
1 teaspoon ground cumin
15 ounces black beans (or 1 1/2 c cooked dry-packaged black beans, rinsed and drained)
15 ounces pinto beans (or 1 1/2 c cooked dry-packaged pinto beans, rinsed and drained)
1 cup tomatoes, chopped
1/2 cup cilantro, finely chopped
salt
pepper
12 tortillas (6 inch)
1 c Mexican blend cheese
sour cream (as garnish)

BAKED BEAN AND CHEESE QUESADILLAS

These quesadillas have little in common with fast-food varieties, which are made with flour tortillas and a lot more cheese. A Taco Bell cheese quesadilla has 480 calories and 1,000 milligrams of sodium; if you order cheese quesadillas at Baja Fresh, you're asking for 1,200 calories and 2,140 milligrams of sodium. I make a meal out of quesadillas by including beans or vegetables with the cheese, and I use corn tortillas rather than flour. Another plus: Quesadillas make a great destination for leftovers. Beans in a thick sauce make a delicious and comforting quesadilla filling.

Baked Bean and Cheese Quesadillas image

Steps:

  • In a microwave: Place a corn tortilla on a plate. Top with the beans. Lightly mash the beans with the back of a spoon. Sprinkle on the cheese, and top with the remaining tortilla. Press down gently, then microwave for 1 to 1 1/2 minutes until the cheese has melted. Remove from the microwave, cut into quarters or sixths and serve.
  • In a pan: Place a corn tortilla in a pan. Top with the beans. Lightly mash the beans with the back of a spoon. Sprinkle on the cheese. Turn the heat to medium-high, and heat until the cheese begins to melt. Place the remaining tortilla on top of the cheese, and press down lightly. Flip over the quesadilla in the pan, and heat for about 30 seconds or until the cheese has melted. Flip back over, and remove to a plate. Cut into quarters or sixths and serve.

  • Add the shrimp and taco seasoning and cook for another 1-2 minutes or until shrimp begins to turn pink.
  • Transfer the mixture to a bowl and rinse and whip down the pan with a paper towel. Return the pan to the heat and spray cooking spray or brush with about 1 teaspoon vegetable oil.
  • Place a tortilla in the pan and sprinkle cheese on one side of the tortilla. Spoon about 5-6 shrimp or enough to cover with another sprinkle of cheese. Fold tortilla in half. Cook for 2-3 minutes on each side or until golden and crispy. Repeat for reaming tortillas.
