Golden Delicious apples are used for this autumnal dessert, but Rome Beauties work well, too.

Steps:
- Peel skin off top quarter of each apple. Using melon baller, scoop out core, leaving bottom intact. Stand apples in 13x9x2-inch baking pan. Mix sugar and spices in bowl. Reserve 2 tablespoons mixture. Fill apple cavities with remaining sugar mixture. Spoon 1/2 tablespoon maple syrup into each cavity. Scatter 3 tablespoons butter pieces over apples. (Can be made 4 hours ahead. Cover; chill.)
- Preheat oven to 350°F. Pour 1/2 cup water into pan with apples. Bake apples 35 minutes. Add reserved 2 tablespoons sugar mixture, 2 tablespoons maple syrup, 1 tablespoon butter, and 1/2 cup water to pan. Bake until apples are tender when pierced with skewer, about 25 minutes longer. Transfer apples to 8 bowls. Place baking pan atop 2 burners; boil over medium-high heat until syrupy, about 2 minutes. Spoon sauce over apples. Serve with whipping cream, if desired.

- Preheat oven to 350 degrees F (175 degrees C).
- Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
- Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

BAKED APPLES WITH BROWN SUGAR
Great comfort food. Best to make fresh but you can prepare the apples well ahead of time and just refrigerate until ready to bake. They'll brown up a little bit from exposure to air but that won't matter once they're cooked, all bubbly, brown and delicious.

- Preheat oven to 350 degrees F.
- Wash and dry apples. Cut the apples in half and remove the core but leave any stems intact. Place apples in baking dish. Divide butter among each core cavity. Top each apple half with a tablespoon of sugar and dash with cinnamon.
- Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Serve with Creamy Custard Sauce.
- Heat the melted ice cream in a small saucepan over low heat until hot. Meanwhile, put the yolks in a mixing bowl and whisk until smooth. While whisking, slowly drizzle about 1 or 2 tablespoons hot melted ice cream into the yolks until blended. While whisking constantly, slowly add the rest of the hot liquid to the yolk mixture. Pour the mixture back into the saucepan and return to low heat.
BAKED APPLES
Steps:
- Preheat the oven to 375 degrees F.
- Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.
- Combine the butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll log shapes of the mixture and press enough into each apple to fill the core.
- Fill a 2-quart baking dish with about 3/4 cup water, or enough to cover the bottom. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, 1 hour.
BROWN SUGAR MAPLE BAKED APPLES
This is a delicious, good old-fashioned southern style baked apple and it makes a wonderful sauce! I have used both, Golden Delicious and Rome Beauties with excellent results. I have also added raisins soaked in rum or Grand Marnier right into the core cavity. I like it with a good vanilla ice cream, but whipped cream is just as yummy. Can easily halve this recipe if needed. This is adapted from Bon Appetit magazine, Oct. 2001.

- Preheat oven to 375°.
- Squeeze juice from lemon halves into a large bowl with 2 cups cold water.
- Peel top third of each apple.
- With a small knife and working from the top of each apple, carefully carve out a large"bowl," including the core, about 2 inches in diameter, leaving the bottom of apple intact.
- Reserve all cut-away pieces.
- Place carved apples in lemon water.
- Chop cut-away apple pieces into small chunks, removing any core or seeds.
- Toss with 3 tablespoons honey and cinnamon; set aside.
- Combine remaining 9 tablespoons honey with 1/2 cup hot water and stir until well blended.
- Stand apples, cut side up, in a 9" x 9" shallow baking dish.
- Place 1 teaspoon butter in bowl of each apple and pour honey and water mixture on top.
- Cover dish with foil and bake until tender, 25 to 35 minutes.
- Meanwhile, in a medium saucepan, bring 1 3/4 cups water and a pinch of salt to a boil.
- Add oatmeal and apple pieces, and stir until mixture returns to a boil; reduce heat and cover.
- Cook until tender, 7 to 10 minutes.
- Remove from heat.
- Remove apples from oven and carefully fill with oatmeal mixture.
- Top with brown sugar.
- Place under the broiler 1 minute, just until light brown sugar is bubbly and dark brown.

- Preheat oven to 375°F Grease a baking pan just large enough to hold the apples.
- With a small knife, cut at an angle to enlarge the core opening at the stem end of each apple to about 1 inch diameter. (The opening should look like a funnel shape.).
- Arrange the apples in the prepared pan, stem end up.
- In a small saucepan, combine 3/4 cup water with brown sugar, nutmeg and pepper. Bring the mixture to a boil, stirring. Boil for 6 minutes.
- Combine the walnuts and raisins. Spoon some of the walnut/raisin mixture into opening of each apple.
- Top each apple with some of the diced butter.
- Spoon the brown sugar sauce over and around the apples. Bake, basting occasionally with the sauce, until the apples are just tender, 45-50 minutes. Transfer the apples to a serving dish, reserving the brown sugar sauce in the baking pan. Keep the apples warm.
- For the caramel sauce, mix the butter, cream and reserved brown sugar sauce in a saucepan. Bring to a boil, stirring occasionally, and simmer until thickened, about 2 minutes. Let the sauce cool slightly before serving.

- Stand apples upright on bottom of slow cooker, and spoon raisin-brown sugar mixture into centers of apples, dividing evenly.
