- Preheat the oven to 400°F. Lightly grease a baking sheet lined with aluminum foil. Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt and pepper to taste. Sauté until onions are garlic are tender, set aside to cool. Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. (That step is not as important when you use fresh broccoli, its just a way of getting all the extra moisture out of frozen broccoli, you don't want it to be real wet) Place the drained broccoli into a large bowl, add the onion and garlic and mix gently. To the same bowl, add the panko, the cheeses, eggs, and salt and pepper to taste. Mix together and form into patties, place on the prepared baking sheet. Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.

- 1. Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray lightly with non-stick spray.
- 2. Heat oil and saute the onions and garlic until softened. Season with salt and pepper. Set aside to cool.
- 3. Place the thawed broccoli in a kitchen tea towel and twist each end tightly to remove any excess water. In a bowl, beat the eggs and mix in the cheeses. Give the broccoli a rough chop.
- 4. Add the broccoli, garlic, onions and Panko crumbs to the egg/cheese mixture and mix well.
- 5. Form patties and place on baking sheet. (The mixture has a wet consistency at this point--you don't think they will hold together, but they do.)
- 6. Bake for 15 minutes. Flip the patties over and cook for another 15 minutes.
- 7. ENJOY! I can see dipping these in a garlic aioli, mayo/dill or ranch dressing if one was so inclined. Great grab-n-go snacks. Note: I've also added cauliflower and/or shredded zucchini...works just as well.

- 1. Line a cookie sheet with foil, lightly grease the foil.
- 2. Preheat oven to 400 degrees.
- 3. Heat oil in a small pan over medium heat. Add minced garlic, onions and dash salt and pepper. Saute' til onions and garlic are tender; set aside to cool.
- 4. Put broccoli into large bowl and add onion/garlic mix. Stir gently.
- 5. Add cheeses and egg and mix.
- 6. Add panko bread crumbs, garlic powder, Old Bay and salt and pepper. Mix again gently and then form into patties.
- 7. Place on prepared baking sheet and bake at 400 degrees on one side til brown, 15 mins. Turn over and bake for 15 additional minutes, browning the other side. Enjoy!

BROCCOLI CHEESE BAKE
This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
- Bake in preheated oven for 30 minutes.

- Heat the oil in a large skillet over medium heat. Add the onions and garlic and cook, stirring occasionally, until they begin to soften. Add the broccoli and give everything a stir. Cook until the broccoli just begins to soften, about three minutes. Remove from the heat.
- In a large bowl, whisk the eggs, then whisk in the panko, cheddar and Parmesan. Add the broccoli mixture and stir to combine thoroughly. Use your hands to form six patties. Don’t worry about making them perfectly round, but do try to make them even in thickness. Arrange the patties on the baking sheet.
