BAKED CINNAMON BREAD CASSEROLE WITH AL FRESCO COUNTRY STYLE CHICKEN BREAKFAST SAUSAGE
We like to eat healthy when we can without sacrificing taste. This is our way of indulging once in while. It also works great to make ahead for company!!

Steps:
- 1. Place the bread cubes,sausage and cranberries into a lightly greased 3-quart shallow baking dish. Toss to mix evenly.
- 2. Beat the egg substitute, skim milk and vanilla extract and cinnamon in a medium bowl with a whisk.
- 3. Pour the egg mixture over the bread cubes.
- 4. Stir and press the bread cubes into the egg mixture to coat.
- 5. Refrigerate for 1 hour or overnight.
- 6. Bake at 350°F. for 45 minutes or until a knife inserted in the center comes out clean.
- 7. Sprinkle with the confectioners' sugar. Serve with butter and syrup if desired.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
- Brown sausage in a large skillet; drain fat.
- Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
- Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

Chicken breasts baked with cinnamon and other seasonings. This is a recipe that I created while working at a flight kitchen. We had cinnamon in the spice collection that nobody used for anything, so I decided to try it on chicken and the flight crews and my family loved it!

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle evenly with ground cinnamon, seasoning, garlic powder, salt and pepper. (Note: You can be liberal with the seasoning, garlic powder, salt and pepper; however, the cinnamon should only be a dusting and not clumped.)
- Bake at 350 degrees F (175 degrees C) for about 30 minutes or until chicken is cooked through and juices run clear.

- In a large bowl, combine flour, sugar, yeast, cinnamon and salt. In a separate bowl, whisk together milk, butter and egg. Add milk mixture to flour mixture; beat until smooth. Cover and let rest for 1 hour. , Stir baking powder and cinnamon chips into batter. Spoon into a greased 8-in x 4-in. loaf pan. Sprinkle with cinnamon-sugar. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.

- Spray a large sauté pan and a 9 x 13 inch baking pan with cooking spray. Set the baking pan aside and heat the sauté pan over medium-high heat.
- Add onion, bell pepper, and sausage to the pan and stir frequently until vegetables have softened and sausage begins to brown (5-7 minutes). Remove from heat and cool.
- While the sausage mixture cools, whisk together eggs, half and half, salt, pepper, paprika, garlic powder, and nutmeg until well combined. Set aside.
- Scatter biscuit pieces over the bottom of the baking pan and top in an even layer with the cooled sausage mixture. Sprinkle cheddar cheese evenly over top. Top with egg mixture.
