My family loves ham like this. Sweetly seasoned ham roasted with moist heat is a delicious way to celebrate special occasions. If using a pre-cooked ham, follow the directions on the package for baking times.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place ham in a roasting pan, and press whole cloves into the top at 1 to 2 inch intervals. Pack the top with a layer of brown sugar. Pour enough water into the bottom of the roasting pan to come to a 1 inch depth. Cover the pan tightly with aluminum foil or a lid.
  • Bake for 4 1/2 to 5 hours in the preheated oven (about 22 minutes per pound), or until the internal temperature of the ham has reached 160 degrees F (72 degrees C). Make sure the meat thermometer is not touching the bone. Let stand for about 20 minutes before carving.

Steps:

  • Preheat the oven to 325 degrees F.
  • Score the surface of the ham about 1/8-inch deep in a diamond pattern. Insert a clove into the middle of each diamond.
  • Bake the ham for 2 to 2 1/2 hours, or longer depending on package directions.
  • Heat the brown sugar, mustard, vinegar and soda in a small saucepan until bubbly. Cook until thick, about 15 minutes.
  • After 2 hours of baking time, brush the glaze on the ham in 20-minute intervals until nice and glossy.

1 fully cooked ham, bone-in (18 to 20 pounds)
Whole cloves
3 cups brown sugar
1/2 cup spicy brown mustard
2 tablespoons apple cider vinegar

You can remove the rind from the ham and score the fat up to 1 week before, just recover with the rind or store in a ham bag (soaked in water & vinegar) in the coolest part of the fridge. You can also cook the ham 1-2 days early if you want to serve it cold, or even on Christmas morning if you can't fit your other meat and veggies in the oven at the same time. Steps:

  • Place oven shelf in lowest position of oven. Preheat oven to 160C (320F). Line a large roasting pan with baking paper.
  • Gently run your thumbs between the rind and fat of the ham to remove the rind. Leave the shank covered with rind and cut off the remainder (a zig-zag pattern looks nice). Score the fat in a diamond pattern with sharp knife, with cuts no more than 5mm deep. Place ham into prepared roasting pan.
  • Whisk marmalade, sugar, mustard and egg yolk in a bowl until smooth, and brush liberally over surface of ham.
  • Add nuts to remaining marmalade mixture and stir to coat. Spoon nut mixture onto upper side of ham and press on firmly.
  • Cook ham for 1 hour. To brown evenly, rotate ham every 15 minutes. Cover loosely with foil and let ham rest for 10 minutes before slicing.
  • To carve ham so everyone gets some crust: near the shank, make a vertical cut down to the bone. Then make another cut, starting 1-2cm (.5-1 inch) away and angling back to the first cut and remove the resulting wedge of ham. Now make several thin parallel slices down to the bone, then cut along the bone underneath the slices to remove.

Double Mustard and Herb Crusted Ham image

Steps:

  • Let the ham sit at room temperature 30 minutes. Preheat the oven to 325 degrees F. Trim off any skin from the ham if needed. Score the ham through the fat in a diagonal crosshatch pattern without cutting into the meat. Place the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch of water into the bottom of the pan. Roast the ham until it reaches an internal temperature of about 130 degrees F, about 2 1/2 hours or 15 minutes per pound.
  • Meanwhile, mix the mustards and honey together in a small bowl. Mix together the breadcrumbs, parsley, thyme and olive oil together in another bowl.
  • Remove the ham from the oven when it has reached 130 degrees F internally. Increase the oven temperature to 425 degrees F. Spoon or brush the mustard mixture all over the ham. Carefully pat the crumbs all over the ham. Add water as needed to the bottom of the pan. Return the ham to the oven and roast until the breadcrumbs are golden brown, about 25 minutes more.

Easy Baked Ham image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove as much of the ham from the bone as you can. Layer one third of the ham in the bottom of a 6 quart casserole dish. Top with a few pineapple rings and 1/4 of the brown sugar. Repeat the layers, ending with pineapple rings on top, but don't sprinkle the last 1/4 of brown sugar.
  • Pour any juice left in the pineapple can over the ham. Then pour in enough of the ginger ale to fill the dish about half way. Sprinkle the remaining brown sugar over the top.
  • Cover with aluminum foil and bake for 20 minutes in the preheated oven. Uncover and cook for an additional 20 minutes.

Steps:

  • Place the raw ham in a large, clean bucket. Add enough water to cover and soak overnight, or up to 24 hrs ahead, changing the water twice.
  • Heat oven to 180C/160C fan/gas 4. Drain and place the ham in a large roasting tin, cover tightly with foil and bake for 3 hrs.
  • Remove the ham from the oven and turn the heat up to 200C/180C fan/gas 6.Using a sharp knife, carefully slice the rind off the ham, leaving about 1-2 cm of fat; cut a diamond-shaped pattern into this. In a small bowl, mix together the sugar and mustard, then rub all over the ham. Roast for 30 mins until the ham is tender and the outside nice and sticky.
  • Bring to the table on a large platter lined with bay leaves. To serve, cut 1cm-thick slices off the ham to go alongside the rye bread, pickles and mustard sauce (Make your own sauce with our recipe below).
