BAKED HAM WITH SWEET GLAZE
This is a common recipe brought down through my family. My grandmother made it, my mother still makes it, and we all love it to pieces! It is great left over or chopped into a fresh green salad. I love this ham glaze because it is simple, easy and delicious!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place ham on a rack set in a roasting pan, and carefully pour about 1/2 inch of boiling water into the pan beneath the ham.
- Bake the ham in the preheated oven for 2 hours, or until a meat thermometer inserted into the thickest part of the meat (do not touch the bone) reads at least 140 degrees F (60 degrees C.)
- Reduce oven heat to 350 degrees F (175 degrees C.) In a bowl, mix together the brown sugar, flour, dry mustard, honey, and lemon juice as needed to make a thick, smooth paste. Brush the ham generously with glaze. Skewer 1 pineapple chunk and 1 maraschino cherry per toothpick, and insert the decorated picks all over the ham.
- Return the ham to the oven, and roast for 15 minutes. Baste the ham, fruit and all, with glaze and juices that have collected in the bottom of the pan, return to the oven, and roast for an additional 15 minutes. Let the ham rest for at least 10 minutes before slicing.

SIMPLE AND SWEET HAM GLAZE
A quick and easy glaze for your ham. I found it on cooks.com awhile back, and it is a favorite of my husband. You may not use all the glaze for a half sized ham. Servings depend on the size of your ham.

- Mix all ingredients together.
- To use the glaze, remove your ham from the oven when there's 30 minutes left. Pour off any drippings that have accumulated in your pan. Take a sharp knife and score the ham in a criss-cross pattern. If it's a spiral ham, making a set of vertical cuts should be fine. Use about a third of the glaze to coat the ham, and return to 400°F oven for 8-10 minutes.
- Repeat applications of the glaze 1-2 more times, returning the ham to cook for about 8 to 10 minutes after each application of the glaze. Be sure not to use glaze in the bottom of the pan - this will dull the sheen.

- Adjust the oven racks to accommodate a large covered roasting pan. Fit the pan with a shallow rack. Preheat the oven to 350 degrees F.
- Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with the lid and bake for half the estimated cooking time (Total cooking time is about 20 minutes per pound.) Halfway through the estimated cooking time, add the sugar and honey to a saucepan, cooking over medium heat until smooth and sugar is dissolved. Pour the mixture over the ham and continue baking the ham, basting occasionally with the drippings in the roaster.
- Check for doneness at the end of the estimated cooking time by inserting a meat thermometer at a meaty point (not into fat or touching the bone). It should register 160 degrees F.
- Allow the ham to stand for 15 minutes before slicing to allow the juices to set.
ROAST HAM WITH SWEET MUSTARD GLAZE
Steps:
- Slice the surface of the ham about 1-inch deep on the diagonal from left to right, spacing each slice about 1 1/2inches apart. Then go back and slice diagonally from right to left spacing each slice about 1 1/2 inches apart to form a diamond pattern. Put a whole clove in the center of each diamond.
- Preheat oven to 350 degrees F.
- Put the ham in a roasting pan fitted with a rack. Add the vegetable broth to the bottom of the roasting pan. Bake in the oven for 1 1/2 hours.
- While the ham is cooking combine all the glaze ingredients in a pot, and reduce by half over medium-low heat.
- After 1 1/2 hours remove the ham from the oven and generously baste with the sweet mustard glaze. Return the ham to the oven and bake for an additional 30 minutes, basting with the remaining glaze every 10 minutes.
- After the ham has cooked for 2 hours and has become golden brown and caramelized remove it from the oven, to a cutting board, cover with foil and allow it to rest for 15 minutes before slicing and serving.
SWEET AND SOUR GLAZED HAM
Steps:
- HEAT oven to 325 degrees F. Combine jelly, mustard, lemon juice and ground cloves in medium saucepan; place over medium heat and bring to a boil, stirring occasionally. Set aside.
- SCORE fat on ham in a diamond design; stud with cloves. Place ham, fat side up, on rack in roasting pan. Insert meat thermometer, making sure it does not touch bone.
- BAKE, uncovered, until thermometer registers 140 degrees F (1 1/2 to 2 hours); baste every 15 to 20 minutes with sauce.
- HEAT remaining sauce; serve with ham.
SMOKED HAM WITH SWEET HOLIDAY GLAZE

- Season the ham with dry rub. Place plastic wrap over ham and put in refrigerator. Allow the seasoning to penetrate the ham overnight to give it a fuller flavor.
- Using indirect heat, preheat your grill to 250 degrees F. with hickory chips and charcoal.
- Place ham in an aluminum roasting pan and place on grill grates. Let smoke for 3 hours, making sure the temperature remains at 250 degrees F; adding more hickory chips and charcoal, as necessary. Remove to a platter.
- For the glaze:
- Place all ingredients into a saucepan over medium heat. Allow to simmer, cooking for 10 to 15 minutes, until the glaze is syrupy.

SWEET STICKY HAM GLAZE
This glaze came about when the ham my friend bought for Easter dinner didn't have the typical glaze packet included. Together we hit on this concoction that everyone at dinner thought was yummy! We wanted to make enough glaze that we could serve it at the table for individual slices - this way, the person who gets the end of the ham doesn't get all of the glaze and if you get a regular slice you only get a little on the outside. Everyone is able to have glaze with their ham.

- Set aside Pineapple Slices.
- Mix pineapple juice, brown sugar, butter, and molasses, in saucepan and heat until bubbly stirring continuously. Continue cooking for 10 minutes (the mixture will thicken only slightly). Then add the crushed cookies.
- Continue simmering and stirring while the mixture reduces by about 1/3. This will take about 15 minutes more.
- If you still desire a thicker sauce, mix cornstarch and water to make a slurry.
- Continue stirring the boiling sugar/juice mixture while adding slurry. You may not need to add all of the slurry, depending upon how thick you like the glaze.
- Cook for five minutes longer. The glaze should be quite thick and will easily coat the back of a spoon.
- 30 minutes before ham is finished cooking, use toothpicks to attach slices of pineapple all over outside of ham.
- Cook ham for an additional 30 minutes.
- Pour half of glaze over ham and pineapple slices.
- Reserve additional glaze for individual servings.

SWEET AND JUICY BAKED HAM

- If possible, have your butcher remove the shank from your ham and package the Shank Meat separately. Most will do this at no extra charge. You can use the shank meat as a base for other recipes.
- If you can find the Brown Sugar flavor of Karo Corn Syrup, use it rather than regular corn syrup. Grocers sometimes only carry this flavor during the Holiday Season.
- Make sure your Ham is completely thawed before cooking.
- Remove the wrapper from your ham, and rinse your ham under cold water.
- To make your glaze pour your can of fruit cocktail into your blender. Puree it into liquid, then pour it into a large bowl. Add your brown sugar and Coca Cola. Hand stir gently for a few minutes until the glaze is consistent.
- Protect your baking pan by spraying it with cooking spray then covering the bottom with heavy duty tinfoil.
- Place your rack in the pan, then place your ham on the rack.
- If you have a food injector, load your syringe about 5 times and inject your glaze into the fatty pockets of your ham. This will ensure the inside of your ham is as tasty as the outside.
- Drizzle about half your glaze over your ham, then cover the ham loosely with a tent of aluminum foil.
- Bake your ham for 18 min per pound at 350 degrees. One hour before cooking is done, pour the remainder of your basting mix over your ham, re-cover it with the tent and allow it to finish cooking.
- When your ham is done, remove from the oven, wrap tight in your tinfoil, and let it stand for 20 to 30 minutes.
- Your guests will be amazed at the flavor. Try to be modest when you are complimented about your culinary excellence.

Based on the classic "Ham with red-eye gravy". The glaze may seem pasty and messy when you are putting it on but don't worry it lends a lovely color and flavor to the exterior of the ham. Don't let the title fool you, the majority of the cooking for this delicious ham is poaching on top of the stove. - Place the ham in a very large stockpot and place water in the pot until it just covers the ham. Put the pot on the stove and turn the heat on high. When the water begins to boil, reduce heat to low and let the ham poach for 1 1/2 hours.
- While the ham is cooking prepare the glaze. Combine the brown sugar, vinegar, mustard, and black coffee in a bowl, and stir with a fork until the sugar is dissolved. Add the breadcrumbs and blend in (The glaze will become somewhat pasty as the breadcrumbs absorb the liquid.).
- Preheat oven to 400 degrees.
- Remove the ham from the pot of water and place in a large baking pan. Carve away the excess fat, if desired, and some of the rind.
- Spread the glaze evenly over the surface of the ham.
- Reduce the oven heat to 375 degrees, and bake the ham in the oven for 20-30 minute, or until the crust is hot and dark brown.
- Remove the ham from the pan and place on a cutting board.
- Allow to rest for at least 15 minutes before carving.
